I've seen this on the show of Jamie Oliver's Naked chef. So easy and yummy!
Chili con Carne
4 onions,finely chopped
2 cloves garlic,finely chopped
2 tsp cumin
4 tsp chili powder
minced meat
sun dried tomatoes
minced chili peppers (seeds out)
1 cinammon stick
4 cans of tomatoes (whole with sauce)
1 can water
In a pan with olive oil, saute garlic and onion. Add cumin, chili powder. Add the meat and cook till brown. Next add the sundried tomatoes,chili and put the cinammon stick. Pour canned tomatoes and water. Let it boil and simmer till cooked.

1lb lamb mince, 2 peppers 1 red 1 green sliced, garlic, tin chilli beans in sauce (tesco) salt, chilli powder 1 tsp, sliced onion.
fry onion, peppers, garlic until onions go pale golden colour, add lamb mince and fry till browned, add chilli beans and chilli powder, stir all together, add half pint water and simmer for 10 mins. Salt to taste. if you want sauce a bit thicker I mix a tablespoon of flour with some water and stir it into chilli at end. If you like mushrooms fry them at the same time as onions etc.
My favorite and the easiest is:
1 lb ground chuck
1 can Bush chili hot beans
1 pk chili seasoning with onions
1 large can crushed tomatoes
Brown ground chuck, add beans, tomatoes and seasoning. Slowly bring to boil then simmer until you're ready to eat!
This will feed 2 but if you like chili like we like chili it will take this much for each person!
This recipe is great for pot luck dinners. Take extra copies of the recipe. You'll need them!
Black Bean Turkey Chili
2 tsp. vegetable oil
1 onion; chopped
2 cloves garlic; minced
1 lb. ground turkey or chicken
1 red pepper; chopped
1 green pepper; chopped
1/2 c. celery chopped
4 Tbsp. chili powder
1 Tbsp. cumin
3/4 tsp. salt
1/2 tsp. oregano
1/4 tsp. red pepper flakes
1/4 tsp. black pepper
1 small can mexicorn; drained
1 (8oz) can tomato sauce
1 (28oz) can tomatoes; diced
2 c. black beans
1 c. red or white kidney beans
1/4 c. parsley; chopped
In a large pot cook onion and garlic in oil till soft. Add turkey and cook, stirring occasionally till no longer pink. Stir in peppers, celery and all spices except parsley. Cook, stirring for 1-3 more minutes. Add tomato sauce, tomatoes and beans. Bring to a boil, reduce heat and simmer 20 minutes. Add corn and simmer 10 more minutes. Stir in parsley and serve.
Scotch Bonnet Chilli
I love, adore and need the addictive burning that only a Chilli pepper can produce. I have finally hit upon my favourite recipe, please bear in mind this is for serious aficionados only.
Ingredients:
500 gr Minced/Ground Beef
10 to 15 Fresh Scotch Bonnet/Habenero Chillies
6 Tablespoons of Hot Chilli powder
2 Cans of Premium chopped Tomatoes
1 Can Red Kidney Beans
4 Tablespoons Tomato Ketchup (adds sugar)
2 Good sized Onions 1 chopped, 1 Finely sliced
6 Cloves of Garlic roughly chopped and crushed
1 teaspoon Cumin powder
1 Pint Water
Oil
Butter
Salt and Pepper to taste
Soured Cream
Grated Cheddar/Parmesan Cheese
Method:
In a large pan, warm enough oil to cover the base. Add Chilli powder and stir for 2 minutes, add onions and finely chopped chillies, stir for 4 minutes until soft and onions begin to colour, add garlic, Cumin and Beef. Continue to cook on a low heat for 10 minutes. Add the Tomatoes and drained Kidney Beans, gently simmer for 60 minutes adding water to desired thickness. Add a knob of butter and season to taste. Simple but very effective, if you like it HOT!
Sprinkle with large amounts of the Cheese.
Serve with Garlic Bread and Soured cream, for that added relief.
