INGREDIENTS
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
DIRECTIONS
In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each

Don't know if you ever get to America but Williams Sonoma do some great dry mixes and all you need to do is add water!
Here's an easier one - 2 cups self rising flour, 1 1/2 cups water, and 2 eggs. stir and pour in the griddle and there you have it!
Here is a recipe for pancakes that I've used for years with great results in both fluffiness and taste:
2 cups self rising flour
3 tablespoons sugar
1-1/2 cups milk
2 eggs, beaten
1/3 cup vegetable oil
Combine flour and sugar. Add milk, eggs and oil. Mix until batter is blended - a few lumps are okay as lumpy batter makes better pancakes. Do not overbeat - your pancakes will be thin and tough. Let batter sit for a few minutes. This resting part activates with baking powder in the self rising flour (also a good idea in the recipes above - you'll get fluffier pancakes). For each pancake, pour about 1/4 cup of batter onto hot (375) lightly greased hot griddle. Turn pancakes when tops are covered with bubbles and edges look dry. Turn only once. Delicious!

Can you buy Bisquick in England? I use Bisquick and use the Melt in your Mouth Pancakes Recipe on the back of the box:
2 cups orginal Bisquick
1 cup milk
1 tbsp sugar
2 tbsp lemon juice
2 tsp baking powder
2 eggs
Stir all till blended. Pour less than 1/4 cup on a hot greased griddle. Cook till edges are dry. turn, cook till golden. 14 pancakes.
