Whats the best way to cook fried rice, and what is great to cook with it?

I have tried many ways, but it never seems perfect.


Answers:
Start with COLD plain cooked white rice. So you have to make this the night before and refrigerate it for the next night.

Make some scrambled eggs with 2 eggs, put on side.

Heat 2 tbs peanut oil in a frying pan. Add 3 cups rice and 3 scallions chopped and 2 minced garlic. Fry a minute or two. Add eggs, sesame oil, soy sauce and keep frying. Add some peas. Fry till all heated. Done.

If you want some meat in it, fry up some thin strips of chicken, steak or pork till done, put to the side, add at end with peas.

Just make sure the rice is cold, make sure the oil is really hot and dont have to much of it.
chuck some peas and ham and break an omelette into it also.

Delish.

Try not to use just cooked rice, 'cos then the rice will be too soft and abit sticky.( When I tried it the first time with just cooked rice and I pan fried it with other ingredients...it turned out to be a big rice ball). Mince half an onion, saute in wok, add rice, add 1-2 beaten eggs, add peas,cubed carrots, cubed ham/chicken ,add salt to taste. You can actually add anything you want with the rice, it'll still be fried rice.

The best rice to use is cooked cold minute rice. Heat either sesame oil or peanut oil wichever you like, then add your rice. Then add chopped scallion, bean sprouts, water chestnuts,chopped onion. Cook for about a minute then add your scrambled egg mixture shake the wok and stir at same time so the eggs break up. Then add soy sauce until the rice browns up a bit. Continue to stir for about 1-2 minutes. Thats how to make fried rice. I serve it that way to any function I cater with an Asian or Hawaaiin theme and its always a success. Good Luck!
