Bless Stewie for this recipe! I have posted this recipe numerous times and have gotten good feedback. I LOVE THESE ONION RINGS!
Stewie's Coconut Onion Rings
1 cups high quality coconut milk
1/2 cup all-purpose flour
1 egg
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons sugar
2 tablespoons coconut extract
Mix all ingredients well in small mixing bowl. Let sit in the fridge for 1/2hr.
The onion'
Buy sweet onions. 2 or 3
Maui, Walawala or Texas Sweet, vidallia etc..
Peel and Slice in thick rings
Soak in cold water for 10 minutes
Dry thoroughly
The coating
2 cups panko (Japanese Bread crumbs)
1 cup shredded coconut, Best if unsweetened as the sweet kind will more easily burn
Mix together
In a wide pan, shake the onion ring slices in flour to lightly coat them (this will help the batter adhere better)
Dip them into the batter
Then dip them thoroughly in the coating.
Place on a sheet pan lined with foil or waxed paper in single layers, do not lay rings directly onto of one another
When you have completed all the rings place in the freezer for 1hr.
Heat your oil 4'' of it, to 375' degrees. Fry rings until crispy and golden brown. You can heat your oven to 250' and transfer you completed rings onto a sheet pan so they stay warm.
Flour and beer...and a little salt & pepper. Mix them together...should look like thick paint!
I use an ordinary cornbread mix and add extra flour to a thick consistency. Follow directions on cornbread mix.
You can REALLY easily just dip the onion rings into cornstarch and then sprinkle them with paprika for a little extra flavor. Cornstarch sounds weird, but it works much better than flour on onion rings. Use an egg wash and then the cornstarch, drop them in hot oil and voila! As simple as it gets.

1 quart oil for frying, or as needed
2 cups all-purpose flour
2 teaspoons salt, divided
2 teaspoons ground black pepper, divided
3 egg whites
1 cup milk
1 tablespoon white vinegar
3 large sweet onions, peeled and sliced into thick rings
DIRECTIONS
Heat the oil in a large heavy skillet over medium-high heat, or deep-fryer to 375 degrees F (190 degrees C).
Place the flour in a shallow baking pan, and stir in 1 teaspoon of salt and 1 teaspoon of pepper. In a medium bowl, whisk together the egg whites, milk, vinegar, and remaining salt and pepper until frothy.
Dip the onion rings in the wet ingredients then into the flour mixture until coated. Then dip in the egg white mixture again, and then into the flour again.
Fry onion rings in the hot oil a few at a time so they are not crowded, until golden brown. Drain on paper towels, and serve immediately.
most of the time batter can be too stodgy it's alot easier and quicker to use flour and milk oh and a Lil SALT and pepper
put milk into a Lil bowl
put flour into a different bowl wit seasoning (salt and pepper)
cut onions into you rings
then just simply dip rings into milk make sure well covered then just toss them in the flour a drop into really hot fat and you will have perfect crispy onion rings
