Fast Steak DeBurgo Recipe

4 5 to 8 oz. beef tenderloin steaks

1 C. butter

3 garlic cloves minced

1/2 t. oregano

1 t. basil

6 oz. white wine

Heat broiler, grill or frying pan to hot. Cook to desired doneness. (rare = 6 - 8 minutes, medium rare = 8 - 10 minutes, medium = 10 - 12 minutes)

In a medium pan melt the butter. Add the garlic and spices. Add the wine and stir. Immediately add the steak and remove to a platter. Pour sauce over steaks.

Serves 4.

Chicken Strips Recipe

4 skinless boneless chicken breasts
1 beaten egg
1 T. dijon mustard
1 T. water
1/4 C. flour
3/4 C. dry seasoned bread crumbs
2 T. vegetable oil
2 T. butter
1/2 t. lemon pepper seasoning
salt to taste

Cut each chicken breast in 6 pieces. In a small bowl, mix together egg, mustard and water. Add the flour and lemon pepper together on a plate. Place the breadcrumbs on another plate or wax paper. Dip the strips in the flour, then the egg and the breadcrumbs. Repeat until you have coated all the chicken.

In a 12 inch skillet add the oil and butter. Add the chicken and brown on all sides. It should take about 6 minutes. Season with salt.

Serve with your choice of dipping sauce or ranch dressing.

Serves 4.

Variation: Add 1/3 C. finely chopped pecans or sesame seeds to the breadcrumbs.

Chicken breasts cooked then top with bacon, bbq sauce then melted cheese. Put under the grill til cheese melts yummy.
Frying steak with creamy peppercorn sauce and fried mushrooms. Serve with roasted potato squares yummy.

Chicken:
Rub a chicken breast with a little pepper and paprika, fry in olive oil until cooked. Take a pitta bread, open it and half fill it with salad of your choice. Cut the chicken into strips and put half in the pitta bread (keep the other half, or make 2). Top it off with some homemade red salsa. (Finely chop a few red tomatoes and a couple of red chillis (removing the chilli seeds), fry them in a little olive oil until it reduces to your liking, and add some freshly-torn coriander.) And then just a little grated cheese if you want to add another flavour to it. Yummy lunch.

Minced beef: homemade burgers!!!
In a mixing bowl, and with your hands, mix together as much minced beef as you need (about 100g per burger) with one egg, a medium onion (or more, depending how much you like onions in burgeers, cooked for just a few minutes so it's soft but not going brown), plenty of oregano, a little salt and pepper and whatever spices you would like (I always go for the chilli powder, not too much though, or a little cayenne pepper). Mix very well with your hands. That's messy, but it's sooo worth it. Then simply mould into burger shapes and shallow fry in a little olive oil on each side for a couple of minutes, then finish off under the grill. Check they're cooked by cutting right through the thickest one with a knife to see inside. If you want to make a big batch, layer them between cling film and store in the freezer. They might get a bit misshapen but who gives a toss. They can be served with salsa, too, which is really nice.
