My Roller Derby league is having an end-of-the-season formal awards ceremony for the players. It is catered with an open bar, but the organizers asked me to make a dessert to save some costs. I have baking experience and lots of specialty equipment, but I need ideas.
Any clever dessert ideas for a formal event for rough-and-rowdy rollergirls?
Answers:
Amaretto Cheesecake
Ingredients
* 3 (8oz.) packages cream cheese
* 1 cup sugar
* 4 large eggs
* 1/3 cup amaretto
* 1-1/2 cups Graham Cracker crumbs
* 1 tsp cinnamon
* 1/4 cup sugar
* 8 oz. sour cream
* 1 tbsp sugar (plus 1 teaspoon)
* 1 tbsp amaretto
Directions
1. Mix graham cracker crumbs, cinnamon, sugar and butter. Pat mixture in bottom of a 9 inch spring form pan.
2. Beat cream cheese until light and fluffy. Gradually beat in 1 cup sugar. Add eggs one at a time beating well after each addition.
3. Pour into and bake in a pre-heated 375F oven for 45-50 minutes.
4. Mix the sour cream, sugar and amaretto. Spoon the mixture over the cheesecake when done and return to oven for 5 minutes at 500F. Let set for 48 hours in the refrigerator.
5. Top with 1/4 cup sliced toasted almonds, and chocolate curls before serving.

Banana Foster Cheesecake Squares

A dessert that makes a large amount for a crowd.
Crust:
1 1/2 cups graham cracker crumbs
6 tablespoons sugar
1/2 cup (1 stick) butter melted
Cheesecake Filling:
3 pounds cream cheese softened
1 1/2 cups firmly packed brown sugar
3 tablespoons cornstarch
1 1/2 teaspoons cinnamon
6 eggs
2 egg yolks
1 1/3 cups pureed bananas
6 tablespoons rum
4 teaspoons vanilla
Heat oven to 325 degrees. In small bowl, combine graham cracker crumbs, sugar and
butter until well mixed. Press evenly in bottom of 15 x 10 x 1 inch baking pan.
In large bowl, combine cream cheese, brown sugar, cornstarch and cinnamon until smooth.
Add eggs and egg yolks one at a time, beating well after each addition.
Beat in all remaining ingredients. Pour into crust-lined pan. (Pan will be very full.)
Bake at 325 degrees for 55 to 65 minutes or until center is firm to the touch.
Cool completely before serving. Store in refrigerator. Serves 24

How about an ice-cream sundae bar, where they can make their own sundaes? If you really feel the need to bake, you could include brownies in the bar.
If a bar-type thing doesn't work for your setup, you could serve, say, three small scoops of various flavored ice cream to each person, then bring a tray with cups of various toppings to the table (hot fudge, butterscotch, sliced bananas, whipped cream, chocolate sprinkles, Oreo crumbles, etc.--whatever you want) and people can make their sundaes right at the table.
