Calories vital as eating habits change with age.
Ingredients
1 lb Boneless, skinless chicken breasts
2 cups Low-sodium chicken broth
1 cup Skim milk
3 cups Broccoli flowerets
2 tbs Olive oil
2/3 cup Flour
1/2 cup Grated swiss cheese
1/4 cup Parmesan cheese
1/2 tsp Grnd nutmeg
8 oz Egg noodles
Salt and Pepper, to taste
Preparation
Preheat oven to 350 degrees. Heat a nonstick saute pan over medium-high heat. Saute the chickens breasts until cooked through, about 16 minutes. When the chicken is cool enough to handle, cut it into 3/4 inch chunks.
Bring the milk and broth to a boil, add the broccoli and cook for 2 minutes. Remove the broccoli and set aside: reserve the cooking liquid.
In a separate saucepan, heat the olive oil over medum heat. Whisk in the flour and cook for 3 minutes. Whisk in the reserved cooking liquid and simmer for 5 minutes. Stir in the cheeses. Add the nutmeg and season with salt and pepper.
Cook the noodles in a large pot of water until they are cooked, but still firm, drain and put in a large casserole dish. Add the chicken and broccoli to the casserole dish and pour in the sauce.
Bake the casserole in the oven for 20 minutes. Let the casserole stand at room temperature for 5 minutes before serving.

CHICKEN BROCCOLI CASSEROLE
3 chicken breasts, cooked and diced (or use 3 cans already cooked, flaked chicken)
2 lbs. fresh broccoli, steamed (or use 2 pkgs of frozen and cook to package directions)
1 can cream of mushroom soup (in an effort to cut fat, we use low fat, reduced sodium, etc.cream soups)
1 can cream of celery soup
1 can cream of chicken soup
1 cups mayonnaise
1 tsp. Lemon juice
1-1 cups grated cheese
2 cups dry bread cubes
2 Tbsp melted butter
Drain broccoli and place in 9x13 baking dish. Place chicken over top. In a bowl, combine all the soups, mayonnaise and lemon juice. Spread on top of chicken. Sprinkle with grated cheese. Mix dry bread cubes with melted butter and sprinkle on top of cheese. Bake at 350 for 35 minutes.
A variation. It sounds interesting and may provide a bit of a different flavor. Instead of using 1 can cream of mushroom soup, 1 can cream of chicken soup and 1 can cream of celery soup, use only 2 cans cream of chicken soup. Also, I add 1/2 tsp. curry powder, which adds a very interesting twist.
Here's an interesting twist that only dirties one dish...a skillet. It's really good, I just made it the other night!
Extra Cheesy Chicken and Noodles
4 small boneless skinless chicken breast halves
1 (7.25 ounce) package KRAFT Macaroni & Cheese Dinner
2 cups water
1 cup frozen broccoli, thawed
1 cup KRAFT Shredded Cheddar Cheese, divided
Spray large skillet with cooking spray. Add chicken, cover. Cook on medium-high heat 2 min on each side or until browned.
Add contents of Dinner, water, vegetables, and 1/2 cup of the cheese. Bring to boil, simmer 12 min.
Sprinkle with remaining cheese, cover. Let stand 5 min.
This is an awesome meal that takes less than a half hour, and it reheats well too. Add more cheddar if you love cheese, and seasoning the chicken before cooking will add a nice flavor. You can substitute any frozen veggies for the broccoli, and you can add more than 1 cup if you want. Really, you can play with the ingredients as much as you want to find the desired flavor.
