I am mainly asking for use in baking

extra virgin olive oil and then canola
yes they are interchangeable. use the olive oil for most cooking and canola for frying

evoo is the best for you, but all oil's should be used in modderation

There's a new brand of oil called ENOVA oil and supposably it doesn't get absorbed into the body as fat as much as other brands do.

For saute or pan frying I mostly use a 50/50 blend of good olive oil and canola oil, sometimes I'll add a pat of butter for flavor. For deep frying I use peanut oil and I save the extra virgin olive oil for salads and raw presentations.

I only use olive oil and canola- canola for any baking in place of veg oil and Extra virgin first cold press olive oil for just about everything else. If I fry something like chicken I use canola

extra virgin olive oil and Canola oil are the healthiest.
