Answers:
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour

No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve

Sweet Banana Bread
INGREDIENTS
1 3/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 (3 ounce) package non-instant vanilla pudding mix
2/3 cup white sugar
1/2 cup shortening
2 eggs
2 tablespoons milk
1 1/3 cups mashed ripe banana
1/3 cup chopped walnuts
DIRECTIONS
In a small bowl, sift together flour, baking powder, baking soda, salt and vanilla pudding mix. In a large mixing bowl, beat sugar and shortening until light, scraping sides of the bowl often. Add the eggs one at a time, beating smooth after each addition. Mix in the milk.
Add flour mixture and mashed bananas alternately to creamed mixture, beating until smooth after each addition. Fold in nuts if desired. Pour batter into a lightly greased 8x4 inch loaf pan.
Bake in a cold, (non-preheated) oven set to 350 degrees F (175 degrees C). Bake for 50 minutes, then cover with foil to prevent burning and bake for additional 10 to 20 minutes or until toothpick inserted into the crown comes out clean. Leave in pan for 10 minutes, then remove from pan and cool.

mix together and set aside

1 tablespoon buttermilk (ive used mayonaise when I've run out - works just as well)

1 cup raisins.

mix above togther with hand mixer. fold in flour mixture. pour into greased loaf pan and cook on 350 for 50 - 55 minutes. Yum!

Banana Walnut Bread

1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces

Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.

In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.

With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.

From Me: Make sure the sugar is granulated. Works much better.

Well, I, personally, don't usually have the time nor energy to make a bread from scratch. So, my advice, if you are the same, would be to go down the baking aisle, and locate a pre-made mix. This is the base for a good banana bread. Then, add in some additional fillings, such as walnuts, some cinnamon, some bits of banana, whatever you desire to add in. When done, serve with a nice, cold glass of milk, or crumbled over some vanilla ice cream. Yum!

Combine the flour, baking soda, baking powder and salt; stir into the banana mixture. Stir in the choclate chips. Spread the batter evenly into the prepared pan or pans.
Bake for 50 minutes in the preheated oven, or until a toothpick inserted into the center of the bread comes out clean.

1 ? cups well mashed very ripe bananas(about 3 large)
? cup sour cream
11 TBSP unsalted butter, softened
6 TBSP canola oil
1 cup granulated sugar
? cup packed brown sugar
3 large eggs
1 ? tsp vanilla extract
1 cup chopped walnuts

1.Position rack in the center of the oven and preheat the oven to 350F. Grease cupcake pans and dust with flour.
2.Sift together the cake flour, baking soda, salt and cinnamon into a medium bowl. Whisk to combine and set aside.
3.In a small bowl, combine the bananas and the sour cream; set aside.
4.In the bowl of an electric mixer, using the paddle attachment, beat the butter at medium-high speed until creamy, about 30 seconds. Add the oil and both sugars and beat at high speed until creamy and light, about 3 minutes. At medium speed, add the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as necessary. Beat in the vanilla extract. At low speed, add the flour mixture in three additions, alternating it with the banana mixture in two additions and mixing just until blended.
5.Remove the bowl from the mixer stand and stir in the walnuts by hand. Scrape the batter into the muffin pans(I used and ice cream scoop).
6.Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
7.Let cool and frost with your choice of frosting…I went with cream cheese frosting.

Here is my recipe. It makes two 9X5 loaves. It is very moist and sweet, with great banana flavor.

Banana Bread

2 c. mashed ripe bananas (about 5-6)
1 c. sour cream
1/2 c. softened butter
1 3/4 c. sugar
3 eggs
1 1/2 tsp. vanilla
3 c. flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp. salt
cinnamon sugar (optional)

Heat oven to 350. Grease 2 9X5 loaf pans with butter. If desired, sprinkle pans with cinnamon sugar - just gives it a litlle something extra). Combine banana and sour cream in a medium bowl, blend thoroughly. Set aside.

In a large bowl, cream butter and sugar. Beat in eggs, then stir in vanilla and banana mixture.

Sift together flour, soda, baking powder, and salt in another bowl, then fold into banana mixture until just mixed. Do not overmix. It should be a a little lumpy.

Spread into pans, bake 50-60 minutes or until toothpick comes out clean. Cool before cutting.
