heres a muffin recipe i usually make for all of our church functions, they don't last very long, taste great and could be considered good for you.
Berry Muffins
INGREDIENTS
1 1/3 cups all-purpose flour
1 cup rolled oats
1/4 cup packed brown sugar
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1 cup milk
1 egg, beaten
3 tablespoons vegetable oil
2 cups fresh raspberries
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C). Line a muffin pan with paper or foil muffin liners, or grease with vegetable oil spray.
In a medium bowl, stir together the flour, rolled oats, sugar, baking powder and cinnamon. Add the milk, egg and oil, mix until well blended, then fold in fresh berries. Fill muffin cups 2/3 full.
Bake for 25 to 30 minutes in the preheated oven, until tops are golden brown and muffins spring back to the touch.

Stir in oats, dates, raisins, and cranberries. Make a well in center of mixture. Combine buttermilk, oil, vanilla, and egg; add to flour mixture, stirring just until moist. Stir in boiling water. Let batter stand 15 minutes.
