Any Chefs, Cooks? Perfect Egg Rolls?!


Question:

Any Chefs, Cooks? Perfect Egg Rolls?

I love homemade egg rolls and make them when I can. I have just one problem though. When I drop them into the oil the get these bubbles on the shell (it looks like warts, to be honest).
What are some factors that can cause this?
How can I prevent it?
I know that it will bubble some, but my egg rolls look like a medical case!

ok, a couple of things. 1. you need to refrigerate or quick freeze the rolls before you fry. the colder the wraper the more even the texture will be. 2. make sure you roll them on a paper towel before you fry to remove any moisture on the skin of the wrapper. Good luck!

um, ive never made egg rols before. but maybe you could try turning the heat down just a little.
