When to season sauteed mushrooms?

I know that adding salt to sauteed mushrooms while cooking can make the mushrooms "rubbery" as the salt will draw moisture out of the mushroom. However, does adding pepper to the mushrooms while cooking also have the same effect? Thanks so much for your answers!


Answers:
No. Pepper will not dehydrate the mushrooms. If you use salt AT ALL, use is very sparingly. Next time, try Mrs. Dash or some other "salt" substitute. It will give it a nice salty flavor and won't dry out the mushrooms. Also, try soy sauce or Braggs liquid aminos instead of salt.

I prefer using Garlic Powder when I sautee mushrooms in melted butter and they taste MARVELOUS! 8^)

never tried pepper. i usually sautee them w/ some minced garlic and olive oil.

The best way to sautee mushrooms is to heat up your cooking oil, add your mushrooms and any other ingredient, then after about 2 minutes add your spices. Should turn out perfectly.

salt will always draw out moisture. The best time to add salt to anything is at the end of cooking because anything added at the beginning will only be intensified, so something perfectly seasoned at the beginning will more than likely be salty at the end. I usually saute my mushrooms until most of the liquid is gone and they are a nice golden brown.

You're absolutely right about the salt.What I do when sauteing mushrooms is add the pepper at the very end of the process because I enjoy the more pungent peppery taste.But it will not hurt a thing if you add earlier in the process.If you're serving the mushrooms separately there is a product on the market that is a balsamic vinaigrette reduction that is to die for--Had stuffed portobella mushrooms(crab)last evening with it and it was great.Whens dinner? I'll bring the wine!
