1 can (4 oz.) sliced mushrooms, drained
2 tbsp. chopped green pepper
2 tbsp. butter
1 can (2 c.) chicken gravy
1/2 c. shredded cheddar cheese
1 c. diced cooked chicken
2 c. cooked spaghetti
1/4 c. chopped tomato

In saucepan, brown mushrooms and cook green pepper in butter until tender.
Stir in gravy and cheese; heat until cheese melts. Add chicken, spaghetti, and tomato.

Heat; stir now and then.

Sloppy Joes.. I love em...

Lasagna! You don't even have to cook the noodles!
Brown & drain some burger, add a can or 2 of spaghetti sauce. Layer in a 9x13 pan in this order:
2 tablespoons sauce, spread it around. Layer of noodles, layer of shredded mozzarella. layer of noodles, layer of meat sauce (about half of it), layer of noodles, layer of 2 cups cottage cheese beaten with one egg, layer of noodles, rest of sauce. Pour in 2 cups water. Bake covered for 30 minutes at 375, remove the cover, sprinkle with more mozzarella, bake another 20 minutes.

Serve with salad & garlic bread!

"Easy, fast, healthy and delicious! This perfect weeknight dish takes less than 30 minutes, so it's a regular in our house. You can vary the heat by the kind and amount of chili powder and hot peppers you use. Serve over hot cooked rice, if desired."



For 2
2 skinless, boneless chicken breast halves - cut into bite-size pieces
1 tablespoon chili powder, divided
salt and pepper to taste
1 tablespoon olive oil
1 cup chopped green bell pepper
1/2 cup chopped onion
2 jalapeno peppers, seeded and minced
1 large tomato, cut into chunks
10 drops hot pepper sauce
DIRECTIONS
Season chicken with 1/2 tablespoon chili powder, salt and pepper. Heat oil in a large skillet over medium high heat and saute seasoned chicken for 3 to 4 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm.
In same skillet, stir fry bell pepper and onion until soft. Add jalapeno peppers, tomatoes, remaining 1/2 tablespoon chili powder and hot pepper sauce. Cook, stirring, for an additional 3 to 5 minutes; add chicken and stir fry for 2 minutes more.

We're very fond of stir fry at my house:
Fastest is frozen veggies, shrimp or chicken, and hoisin (like chinese ketchup) or YOUR favorite sauce (just soy works great, too). Start the rice after you cut up the chicken, and it all finishes at about the same time!

Buy 1# ground beef, 1 doz. corn tortillas, hot sauce, sour cream, lettuce, tomatoes. (I like the small cans of sauce, you can go from mild to scorching, + variety of chiles.) It's too easy! Brown the meat, stirring often, meanwhile, chop lettuce & tomato. Put garlic, salt, pepper in pan. When meat's done, drain grease, add small can tomato sauce. Lightly toast tortillas, & put everything in 'em. This should be enough for about 8-10 yummy, fresh tacos. I like to fold, but you can also roll them.
