How long should you boil chicken when making chicken and noodles?

Chicken Noodle Soup
3 to 3 1/2 lbs. chicken
1 onion cut in half
2 celery ribs chunked
2 carrots cut in 3 inch pieces
Place the chicken in a 5-6 qt. pan and cover with water. Add vegetables. Cook about 30 minutes over medium heat until chicken is done. Remove chicken from pot and cool chicken. When chicken can be handled take the meat from the bones and add bones back to pot and cook 1/2 more over medium heat. Chill chicken pieces.
Prepare:
2 celery ribs diced
3 carrots diced
Dice the chicken into bite size pieces.
Strain stock and return to pan. Add 2 cups of water, chicken and prepared vegetables. Cook another 20-25 minutes until vegetables are cooked. Add 4 ounces noodles to the soup and cook 10 minutes. Taste and adjust for salt and pepper.

Sounds like soup...... Until it falls a part. A good 2 hours.
Until the chicken legs are easily moved around.
The best way is a very slow boil or simmer for about an hour. You could do it at warp speed --30 minutes-- but it wouldn't make very tasty broth. The good broth comes from simmering the whole chicken, bones and all. If you want really great broth add a whole carrot and a whole onion to the pot; that really flavors it up.
When I make chicken salad sandwiches, I poach/boil chicken for about 25 minutes, turn off the heat and allow the chicken to remain in the broth while it cools. This procedure will give you moist and tender meat. It doesn't dry out. When the broth is almost room temperature, I remove the chicken and pick the meat off the bones. Sometimes, I just wait for the chicken to cool enough that I don't get my fingers burned when picking the meat apart.
I probably would use this method for making chicken and noodles. Or, I might even roast the chicken instead of boiling it. Wait for it to cool and then pick it apart.
