It makes great pimento-cheese spread, also. Just shred, add chopped pimento and a little mayo. Maybe a shot of onion powder.
My mother combines 8 oz sharp cheddar with 8 oz cream cheese and a little jalapeno, and puts it in the food processor. Makes a delicious spread.
