i like them scrambled. if i have the leftover roast beef, i'll shredd the beef,heat it up put on top of scrambled egg then top the beef with salsa.

i also like chorizo con huevos

I love basted eggs. They are so good. When you fry bacon, take that greece and put it on the egg in the pan. =] It's delicious!!

I like sunny side up.

My 2 favorite ways are a strata and omelettes

CHEESE HAM STRATA

8 slices white bread
2 c. cheddar cheese, grated
3 c. buttermilk
4 eggs, beaten
2 tsp Worcestershire sauce
3/4 tsp dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 c. sliced ham, chopped

Alternate buttered layers of bread, cheese, and ham in a greased baking dish, ending with cheese on top. Mix remaining ingredients and pour over layers. Allow to stand one hour in refrigerator. Bake at 325 degrees Fahrenheit for 50 to 60 minutes or until golden brown on top. Cut into squares and serve.

BAKED MUSHROOM OMELETTE

2 cans (3 oz. each) chopped, broiled in butter, mushrooms
6 eggs
1 tsp. salt
1/8 tsp. pepper
Dash of powdered rosemary

Drain mushrooms, reserving broth from 1 can. Beat eggs slightly with reserved mushroom broth and seasonings. Stir in mushrooms. Pour into well greased, shallow baking dish, about 10 x 6 x 2 inches. Bake in slow 325 degree oven, until omelette is just cooked through, about 35 minutes. Cut into individual servings and serve immediately with wine sauce. Makes 4 servings

I eat my eggs over easy, with potatoes and lots of bacon.

You can boil , devil, fry , scramble, or poach them. You can make an omlette, frittata, or french toast.
The possibilities are endless.

spanish fried, poached, baked, souffleed, meringues, cakes, hollandaise, bearnaise, mayonnaise, frittata, quiche, omelet, pudding, in stuffing, in meatballs & hamburgers, on hamburgers, pavlova, torte, but the best one is scrambled with lots of cream on buttered toast!

An egg sandwich, with a runny yolk, and i throw it on toasted bread.

I love making omletts. and quiche. My favorite quiche is sauteed shrimp with basil, topped with strips of sundried tomato and chopped pistaccios. Saute shrimp and other ingredients and pour into a pie crust. The quiche mix is 12 oz of heavy whipping cream and 2 eggs. Bake at 325 for about 20-25mins then top with the sundried tomatoes and pistaccios when serving. Enjoy!

POTATO AND EGG BAKE

1/2 teaspoon butter
1 1/2 cups mashed potatoes
4 eggs
2 tablespoons grated Velveeta Cheese
1 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder

Preheat even to 400°F.
Prepare mashed potatoes as you normally would.

Butter a 9 inch casserole or baking pan. Spread hot mashed potatoes evenly in the pan and make 4 indentations. Break an egg into each well. Sprinkle Velveeta over the potatoes and eggs.

Season with salt, pepper and garlic powder. Top with a sprinkling of paprika.

Bake in oven for 10 minutes until the eggs have set and the cheese is melted.

BACON, EGG, POTATO CASSEROLE

This is a recipe I have been cooking for years, and is an all time family favourite! This is so easy, the ingredients will just depend on what dish you use.

6 large potatoes
6 boiled eggs
300gm diced bacon or about 5 rashers bacon
3 tbsp butter or marg
7 tbsp flour (any sort)
breadcrumbs, for sprinkling (optional)
2 cups milk

Basically all we do is: Peel the potatoes and boil until all but done; cool and slice.
Boil the eggs, cool and slice. Fry the diced bacon or bacon pieces.

In a casserole dish, layer the sliced potatoes, sliced boiled eggs, and then the bacon.

When finished, prepare a white sauce and pour over dish, then sprinkle some breadcrumbs on the top, if desired. Cook in oven for about 30mins at about 375-400°F (200C).

I don't have any doubt that your family or guests will not rave about this, so simple, things we cook everyday, but together it is a winner!

I like them scrambled. Sometimes I'll make breakfast burritos

frittata, quiche, omelet, egg salad, bacon sandwich with fried egg, scrambled in tortilla, custard (really good), pound cake calls for lots of eggs, fried rice calls for eggs, toss boiled eggs in salads

My favorite breakfast (keeping in mind I have a sweet tooth) is to make scrambled eggs with some sugar (or Splenda) and cinnamon added along with cream. When they're all cooked, I pour a little maple syrup over them and enjoy.

Make some into hard boiled eggs. If you are truly ambitious, do deviled eggs too. Both of those are yummy. I also really like scrambled eggs and sunny side up (if I'm eating them with corn beef hash).
You can also use them to make other things like muffins or cakes.

I take a piece of toast and tear a whole out of the middle. cover it in butter and put it in a pre heated pan. put the egg into the middle whole and let it cook long enough to harden the bottom then turn the toast/egg over and cook to the desired firmness you like. you can put cheese on it if you like but I personally leave it over medium so there is not need for cheese just the yoke mixed with butter and bread.

My favorite is basted which is cooking them as if you were frying them but don't use oil use a small amount of boiling water and keep the yoke semi runny. Here is Breakfast
Egg Rancheros...Here is brunch ;~)
Ingredients:
One 8-ounce can tomato sauce
1 teaspoon chili powder
1/4 teaspoon cumin
8 eggs 1/4 teaspoon pepper
1/4 teaspoon paprika
1 cup (4 oz.) shredded cheddar cheese
4 tostado shells
Sour cream
Jalepeno slices
Combine first tomato sauce, chili powder, and cumin in a lightly greased 9" pie plate. Break eggs evenly over sauce in dish and sprinkle with pepper and paprika. Cover and bake at 350 degrees for 15-20 minutes.
Sprinkle with cheese and bake an additional 5 minutes. Spoon eggs into tostado shells and plop with sour cream and jalepeno.
Green Eggs and Ham ... Here is you some lunch
Ingredients:
1 dozen large eggs
1 pound Monterey Jack cheese, shredded
1 pint sour cream
Surprises (any of the following can be used or mixed):
--3/4 cup ham cut into pieces
--2 small cans green chili peppers (drained well)
--1-1/2 cups raw broccoli, cut in slices
--2 cups fresh mushrooms cooked in butter
--2 cups fresh onion cooked in butter

Beat eggs with a wire whisk until well mixed. Add all of the sour cream and mix well. Add the grated cheese and mix a third time. Place the "surprise" in the bottom of a 9 x 12-inch baking dish that has been well greased with butter or non-fat spray. Carefully pour the egg mixture over the "surprise". If a surprise floats to the top, press it down under the surface with a spoon. Bake at 400 degrees for 45 to 50 minutes until browned. Let stand out for 5 to 10 minutes to set, then cut.

OMELET...Dinner
6 eggs, beaten separately
1 cup of milk
1 tablespoon of butter, melted

Mix milk, yolks, butter, salt and pepper, and add the whites last. Pour into a hot pan which has been well buttered, and cook quickly on top of oven. When it begins to thicken, put inside the oven and brown.

Fold in half and roll and serve hot at once. Omelets should be served immediately.

Variation: Add 1/2 cup chopped ham, bell peppers, onions to the skillet and saute over high heat in 1/2 tablespoon additional butter, until cooked. Gather these ingredients into the center of the pan with your spatula and spread evenly. Proceed as above, pouring the egg batter over the additions.

hard boiled, poached on top of toast, over easy with toast, egg salad on a croissant.

I love fried or scrambled eggs

I use Simply Potatoes hash browns and I cook them in buttler.... while its toasted, I add 3 eggs and mixed them... and when its almost done, I add cheddar cheese and mix them up..... I eat them with tortilla! yummy!! I call it Cheesy Hashbrowns with Eggs.....

Breakfast burritos. Scramble up a bunch of eggs and roll it in a tortilla with bacon or sausage, country gravy, cheese, green chili's, and a few fried hash brown nuggets. MMMM I want one now!

Also if you make scrambled eggs, I use sour cream instead of milk. It makes them so fluffy.

Scrambled. Its the only way i'll eat eggs at all. Other than that, i refuse to eat them, they're yuck! But if you're looking to use up some eggs, make a cake or something that requires you to use eggs

Try the zip lock omelet.
Its fun and quite easy...

When you have a family or friends over, make a selection of fillings...
Diced tomato, grated cheese, diced ham and so on.
Place them in serving bowls and beat any number of eggs, usually two per person.
Have zip lock plastic bags handy.
Give each person a plastic bag and tell them to select the filling combination of their choice.
Now go around the table and add some of the raw beaten egg.
In a pot, have boiling water ready.
Drop the plastic bags, (zip lock) in to the boiling water and cover with lid making sure the bags do not fall in.
In about three minutes you can start checking on the zip lock bags.
The omelets should be ready, and for a change everyone can have his or her omelet at the same time...

I like them scrambled with green chile in breakfast burritos. You could make one of those breakfast casseroles that take lots of eggs and then have the casserole for breakfasts for the next week or so.
