tonight (very last minute) I am hosting a mexican dinner party, only or my partner and myself, that said... I Want to make a REALLY quick and easy mexican dessert... I have maybe an hour.. two hours max..

ANY IDEAS?


Answers:
MEXICAN DESSERT PUFFS

2 c. sifted flour
2 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
1/2 c. water
Oil for deep frying

Sift together the dry ingredients and mix well. Add shortening and water and set aside, covered, for 1 hour. Make about 20 small balls and roll the dough 1/8-inch or 1/4-inch thick on a lightly floured board.
Cut into small triangles, diamonds or square shapes with a sharp knife. Heat oil to 400-425 degrees. Deep fry shapes until they are brown on both sides; remove and drain. Dip in syrup (either recipe below) and place on a dessert plate to serve.


SYRUP #1:
3/4 c. water
1 c. sugar
1 cinnamon stick
1 slice lemon

Combine, bring to boil in a saucepan and boil 10 minutes.

SYRUP #2:
1 c. sugar
1/2 c. water
2 1/2 tsp. honey

Boil sugar and water together about 10 minutes to make a medium syrup. Add honey, blend and heat for 5 more minutes.

fried ice cream! can't get more mexican than that.

I use the packages of FLAN (Royal is the best-at Walmart), and pour it over bread to make "Mexican bread pudding".
The bread I usually use is that fancy Xmas puffy Italian bread with raisins, but you can also use the "King's" Hawaiian bread (It's really puffy/yeast risen too).

You cook the milk flan mixture, pour the caramel packets on serving tray (trifle dish). Place the cubed bread on the caramel sauce, then pour the Flan mix over the cubed bread. Refrigerate for two hours. Serve with coffee+Kahlua

Tortillas (or egg roll wrapper) deep fried in the shape of a bowl, apple pie filling (canned OK but homemade is better) & Mexican vanilla ice cream. Not authentic, but delicious!

Whip some cream, sweeten it with vanilla and cinnamon.

One or two fruits, one cake or cookie type thing, cream, and chocolate syrup to decorate.

Stir into it, chocolate shavings or chips, toasted almonds, crunched up big pieces of graham crackers or butter cookies or bite sized torn pieces of angel food cake or pound cake and some chopped fruit like ripe mango pieces, apples, strawberries, blueberries or banana slices.


If you work quick you should have this ready in under a half hour.

Serve in small cups or on a small plate with a drizzle of chocolate syrup in a design before you put the dessert on it. The cinnamon and the chocolate make it "Mexican".

Keep out some fruit or nut or chocolate piece that you use for garnish on top.
