Good day..
How to and what to use to fry chickens wings to look good & appetizing after a few hours on the table. The wings that I fry always look sloggy and not appetizing after a fews hours on the table for my guests.


Answers:
Honey-fried Chicken Wings

Ingredients:
2 lbs chicken wings, both 1st and 2nd sections
1 cup low sodium soy sauce
1 tablespoon grated fresh ginger
2 tablespoons chopped fresh cilantro
2 cloves garlic, minced
1/2 lemon, juiced
2 tablespoons olive oil
2 tablespoons butter
1/2 cup honey
Salt and pepper, to taste
Sesame seeds, for garnish

Steps:
1. Rinse and dry chicken.

2. Place wings in shallow dish and pour over the soy sauce, ginger, cilantro, garlic, and lemon juice.

3. Toss well to coat, marinate; refrigerate for 2 hours.

4. Remove wings from marinade and pat dry.

5. Season with salt and pepper.

6. In a large saute pan over medium to medium-high heat, melt the butter in olive oil.

7. When the butter stops foaming, add honey and chicken wings and fry until browned on each side, about 5 minutes.

8. Continue cooking wings, turning them over often to coat them as the glaze reduces.

9. Cook until the wings are sticky and cooked through.

10. Garnish with sesame seeds and serve.

11. DO NOT OVER COOK or the glaze will burn and taste nasty!

A few hours is way too long for chicken to be on a table. It should be eaten within a coupla hours, after being cooked; perferably less than two hours.
After the wings have been fryed, drain on paper towels to absorb the fat or oil. Then arrange them on the serving platter. Garnish. Try to anticipate how many will be eaten by the guest and cook only enough to serve the number of people at the table. It would be better not to have any left overs than to allow these to sit out on the table for too long and spoil.
If you are serving these in a restaurant, then you may have to fry the wings in "shifts."

Do not use bread crumbs.......soak your wings in salted water for a few hours in the fridge.....take them out.....rinse them off....then sprinkle with salt and pepper.....in a ziplock or other plastic bag, put some flour salt and pepper and take a few wings and shake in the bag until coated. Place on a plate....when you finish make sure you oil is hot and fry and drain on paper towels or brown paper bags.....they should stay crispy. You can leave them out, everybody does at get togethers or parties.
