Healthy Baked Potatoe Toppings !!?

hiya i am on a diet and is it ok to eat a jacket potatoe for dinner at a night time ??
what fillings could i have with it thats very healthy and low in calories and fat !
needs to be very healthy though !!! sick of boring salads !!

Have it with chicken breast and low fat mayo or prawns and Marie rose sauce or tuna or peppers and onions cooked with fajita flavouring or vegetable chili.

tuna, baked beans, cottage cheese?

Well when dieting you should really limit the amount of carbs in your diet, but if you have this with your main meal early in the evening it will be fine. Potatoes are really good for you, they contain potassium which helps lower blood pressure! For healthy toppings, you could add a can of weight-watchers baked beans, tuna & mayonnaise (again weight-watchers mayo) or make up a big tub of curried vegetables and freeze what you don't use. I know how boring salads can be when you're trying to eat healthily, I find throwing in some spicey foods help rekindle my appetite ! Another great addition to a meal is brown rice - the body digests it easier than pasta and potatoes and it is full of fibre. You can add anything with it - steamed fish with vegetables covered in soy sauce is virtually fat free!

How about making a chilli using Quorn mice to go on top of your potato? Quorn is naturally low in fat, so would be healthier than regular mince.

Baked potato fillings: tuna, tomatoes, onion and a little low fat mayo, baked beans, low fat coronation chicken, prawns, mushrooms, the list could go on and on

dinner should be kept light - such as homemade vegetable soup with beans, lentils, barley, corn & peas for added fibre. (you can buy canned or frozen)
try a sweet potato instead of a white potato - top with tuna or sardines (packed in water)
cook up some frozen mixed vegetables & combine with no fat yoghurt flavoured with no fat/no sugar salad dressing

Tuna - you can mix a little light mayo in it and that then lets you avoid butter in the potato too, add some cucumber and chopped tomato too its delicious. If you like sweet corn that works well and gives the potatoes a nice texture.

Instead of butter use low fat plain youghurt to soften your potato'
For fillings:- Tuna and sweetcorn, Cottage cheese with pineapple and black pepper., Vegetable curry, Ratatouille. baked beans, curried baked beans, chicken breast chopped with tinned tomatoes and herbs (med style)
Also pasta dishes with tuna or chicken mixed with low fat yog or tomatoes and any other veg should be good for your diet.
