4 egg yolks
100g caster sugar
vanilla essence a few drops
milk 375ml

wisk yolks (which is yellow bit of egg) and sugar until almost white, boil milk with vanilla in a thick based pan, once milk has boild pour onto eggs and sugar then pour into a freezer proof tub place in freezer for few hours take it out, whisk it to remove ice crystals do this 2 more times leave for about 2 hours then come back and do it again.

This is the most simple recipe i have done for making ice cream since i used it for my assesment at my college catering course. Hope you find it ok. makes 8-10 portions

Buy an ice cream maker from an electrical shop. Put the inner bowl in the freezer for 12 hours. Mix milk, caster sugar and vanilla essence together and put into the now frozen inner bowl whilst the mixers keep the mixture moving until its set.



Alternatively, go to the shop and buy some.

Basic Vanilla Ice Cream

1 litre full cream milk 2 1/2 tsp. cornflour
1 tsp. gelatine 3/4 cup sugar
1 cup fresh cream 1 tsp. vanilla essence
1/2cup cold milk

Method

Bring milk to a boil. Boil for 15 minutes on low, stirring occasionally.
Mix cornflour in 1/2 cup cold milk, keep aside.
Add sugar to milk, stir. Add cornflour paste, stirring continuously
till boil resumes.
Boil for a further 4-5 minutes, take off fire.
Sprinkle gelatine over 3 tbsp. water in a small pan.
Allow to soak for 5 minutes. Warm over gentle heat, till dissolved.
Do not bring it to a boil.
When boiled milk cools a little, add gelatine solution and mix well.
Cool to room temperature, freeze in covered tray, till set but not hard.
Break into pieces, beat with an egg beater till soft.
Add cream and essence, mix well.
The texture should be light and creamy.
Reset in the freezer till frozen.



Strawberry Ice Cream

1 cup sugar, divided 2 tablespoons all-purpose flour
Dash of salt 1 1/2 cups milk 2 eggs, slightly beaten
1 1/2 cups sieved or pureed fresh strawberries
1 1/2 cups whipping cream
1 1/2 teaspoons vanilla extract 1 teaspoon almond extract
Combine 3/4 cup sugar, flour, and salt; set aside

Method

Scald milk in top of a double boiler; add a small amount of milk to sugar mixture, stirring to make a smooth paste. Stir sugar mixture into remaining milk; cook, stirring constantly, until thickened. Cover and cook 10 minutes.

Stir a small amount of hot mixture into eggs. Stir eggs into remaining hot mixture; cook, stirring constantly, l minute. Let cool.

Combine strawberries, remaining 1/4 cup sugar, whipping cream, and flavorings; stir into custard. Pour into container of a 2-quart electric or hand-turned ice cream freezer; freeze according to manufacturer's directions.

I have a little culinary secret that im going to share, dont bother whipping cream etc etc.

The best way to make ice cream is actualy to get some bananas (2 per person should do it) then slice them into chunks (size isnt realy important) pop them on a tray then stick them into the freezer.

Leave them to freeze (not rock solid though) then put them in a blender.
It should thicken on there own but you can add milk if you want to.

Realy simple, healthy and cheap!

Place 1/2 cup cream, 1/3 cup milk, 1/8 cup sugar, and 1/4 teaspoon vanilla into a quart-sized ziplock bag and seal tightly. Place 3 cups ice and 3/4 cup salt into a gallon-sized ziplock bag. Place the quart sized bag into the gallon-sized bag and seal tightly. Wrap a towel around the bag and gently roll around for about 5 minutes. Remove the ice-cream from the bag and enjoy!(Makes 1/2 cup of ice-cream)

2 big bowls, 1 small bowl
10 eggs
8 Tbs. sugar
1 lime
4 bags of powdered whipping cream (Dreem)
1/2 liter milk
1 t. Nescafe or other flavoring

In a big bowl, separate the eggs, put the egg yellow into a smaller bowl. Whip the yellow until creamy.

In the other bowl with egg whites, whip until stiff, after add the sugar and squeeze the lime into the egg whites whip together but not much as you don't want the egg whites to loose their stiffness.

In another large bowl add the two bags of dried whipping powder and 1 liter milk, mix until thick and creamy.

Add egg yellow to the bowl of egg whites, and add whipped cream, mix until blended well.

Add 1 T. nescafe or thick strawberry syrup. Or you can add cocoa powder depending on your what flavor you want, of course you can leave it as regular vanilla and add M&M's or crushed Oreo's.

If you put it in paper cups and freeze, it will freeze faster. Have fun and enjoy.

Easy Chocolate Ice-Cream

INGREDIENTS

* 1 (14 ounce) can sweetened condensed milk
* 2/3 cup chocolate syrup
* 2 cups heavy cream

DIRECTIONS

1. Line a 9x5 inch loaf pan with aluminium foil. In a large bowl, stir together condensed milk and chocolate syrup until colour is even. In a separate bowl, whip cream until stiff peaks form. Fold cream into chocolate mixture and pour all into prepared pan. Cover and freeze 6 hours, until firm.

i bought an ice cream maker a few years ago.i used it once and never again.it's now in the bin.it was to time consuming and wasn't cost effective.it's easier and cheaper to buy ice cream from the shops

1) make sure you have a big sandwhich bag and a smaller one. milk, vanilla extract, salt and ice cubes (sugar optional)

2)Take your big sandwhich bag and fill it with ice and salt, take your smaller sandwhich bag fill it with milk adding a nice amount of vanilla extract and dissolving sugar to taste, optional. seal the bag tight.
3) Take your small sandwhich bag and put it inside the big one. Give it a nice shake until it starts to take a shape, then let sit in the freezer until fully ready.(you can add other flavorings if you like, or try the same process except using a ice cream maker.)

You can buy an ice-cream maker but to be honest with you your better off just buying ice-cream because it turns out rotten.. My Dad used 2 always make it and i used to nearly get sick!!!

I just boil the milk, add some sugar and flavourings and freeze it! DONE!

you will need an ice cream maker machine to make this chocolate ice cream, it is GORGEOUS!!
ingredients: 1 tin (small) of condenced milk
1/2 pint of milk
5 tbl spoons cocoa powder

method:
1. dissolve the cocoa with sum hot wter and then mix all the ingredients together in a jug or saucepan
2. i find that if you don't dissolve the cocoa enough then you get lumps of cocoa in you ice cream which taste disgusting so SIVE IT!
3. put the mixture in the machine and wait until it has done churning
4. put in the freezer until you want to eat it! lol

p.s. i have done this about 5 times in the last year everytime it has been the best ice cream ever (makes just over a pint)

I bought one of those machines that you freeze the bowl overnight and add the ingredients to make the ice cream, it wasn't successful.
As the ingredients freeze, the machine can't cope and so stops turning.
If you really love ice cream I would invest in a machine that has a freezer unit built in. They cost around £250 but should pay for itself over a year.
A friend has one and I always pig out on the most delicious ice creams. You can add chunky bits to it without problem, like chocolate, biscuits, cherries etc.
Banana and toffee was to die for!.
