Biscuit crusts aren't typically used for meringue pies, but I gave you a recipe for one after the Apple Cobbler recipe. You can use your favorite pie recipe with it, depending on what kind you want, be it Strawberry Meringue, Lemon Meringue, Lime Meringue, or even a chocolate, coconut or banana cream pie.

APPLE COBBLER

3/4 c. sugar
1 tbsp. cornstarch
1/2 tsp. salt; optional
1/2 tsp. cinnamon
3/4 c. water
1 1/2 tsp. lemon juice
2 tbsp. butter; optional
4 1/2 c. sliced, peeled apples

In large saucepan, combine sugar, cornstarch, salt, and cinnamon. Slowly stir in water and bring to boil, stirring constantly. add lemon juice, butter, and apples. Cook 2 minutes. Prepare sweet biscuit dough. Place warm apple mixture in shallow 2 quart baking dish. Top with biscuits and bake at 400 degrees for 25 minutes or until golden brown. Serve hot. 6 servings.

SWEET BISCUIT CRUST:

1 1/4 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. sugar
1/4 tsp. salt; optional
1/4 c. butter
1/4 c. milk

Roll out to 1/4 inch thickness and cut with 2 inch biscuit cutter.

30 Minute Lemon Meringue Pie

18 milk arrowroot biscuits, crushed
3 ounces melted butter

Filling

1 (400 g) can condensed milk
1/2 cup lemon juice
1 lemon, rind of, finely grated
2 eggs, separated
1/4 cup caster sugar

Combine biscuits and butter.
Press into a foil lined 8" pie plate.
Chill.
Combine condensed milk, lemon juice, rind, and egg yolks.
Place in crumb crust.
Beat egg whites until stiff.
Gradually add the sugar.
Beat until sugar has dissolved.
Spoon or pipe meringue over the lemon filling.
Bake in a moderate oven (350F-375F) for 15 minutes or til golden.
