Dosas, Uttapams - how do you make these nice and round?
any hints or suggestions are welcome. because i can't get mine round.
Answers:
When we make dosas, we pour the batter in the center and use the bottom of the ladle to spread the batter in a spiral form, outwards. It's important that the pan/skillet isn't too hot, or the batter will stick and you'll end up with holes. To make it crispy we drip a very small amount of ghee over it while it cooks, especially the thinner areas. It's nice (and healthier) without the ghee too, though! Hope this helped, and good luck! :)
