in a blender add:
1 avocado
ice
sweetened condensed milk
1 cup of milk
Blend until smooth.
It makes an excellent smoothie! I tried them while traveling in Indonesia and I was hooked!
i like to slice them and toss in my favorite salad..
Dice avocado and add some salt and paper.
Stir fry srimp marinaded in italian dressing.
Boil some green beans.
Add the beans and the shrimp and add some corn and baked beans. Then put the avocados on top.
Eat it with tortilla bread and a hearty tomato soup.
yeah take flesh out of the skin and chop into small pieces, mix woth a little rose marie dressing and mix with prawns and return to skin with a little black pepper over the top.
Sliced avacado sandwich.
I once had an avacado burger. Slice it longways, toast it a few minutes, put it on a bun, then put toppings (your choice)...It was pretty good.

I just had this Avacado and Cheese sub at Togo's yesterday!! It was sooo good. The recipe, was mashed avacado, provalone (or swiss) cheese, and whatever condiments you want, like mayonaisse, mustard, pickles, lettuce... it sounds unusual but it was delicious. It was in 2 Cheddar bread slices. If you're not sure, go to Togo's and ask for it, it's #21. =)
Try marinating them in whatever sounds best to you and grilling on the barbecue. Really good.
There is a restaurant in my town that batters & deep fries slices of avos and serves them with a spicy mayo dip.
Stuff them with tuna, shrimp or mixed veggies. Use dressing or not.
A friend makes avacado sorbet as a pallette clenser for between courses.
Well the web is awash with recipes! Here is one of them (however i don't think i could eat it!)
Avocado Pie
1 (9-inch) prepared graham cracker pie crust
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1 envelope unflavored gelatin
3 medium-size very ripe Hass avocados*
1 (14 ounce) can sweetened condensed milk
1/2 cup heavy cream
1/2 cup sour cream
* If an avocado is ripe, it will yield to a gentle pressure.
Refrigerate graham cracker crust until well chilled.
In a small bowl, combine lime juice, lemon juice, and unflavored gelatin; let stand 4 to 5 minutes or until softened.
In a large bowl or the food processor, combine gelatin mixture, avocados, and sweetened condensed milk. Pour mixture into prepared graham cracker pie crust. Refrigerate at least 2 hours or until the filling is firm. In a small bowl, whip heavy cream and sour cream together until stiff peaks form. Serve pie topped with prepared whipped cream mixture.
Makes 8 servings.

This is a fun take on my favorite kind of sushi ? salmon and avocado with a healthy dose of wasabi. I keep it open faced here so you can see how pretty the insides look and so as not to cover up the succulence of the ingredients with too much bread.
3 tablespoons wasabi paste, or to taste
1/3 cup cream cheese, at room temperature
24 party pumpernickel bread slices
1 ripe Hass avocado
1/2 lemon
16 ounces smoked salmon, thinly sliced
Mix the wasabi with the cream cheese in a small bowl. Spread the bread slices with a thin, even layer of the mixture.
Cut the avocado in half lengthwise and twist the 2 halves apart and remove the pit. Use a spoon to remove the avocado flesh in 1 piece. Slice each avocado half in 1/8-inch slices. Place the avocado slices in a bowl and squeeze juice from 1/2 lemon over avocado slices and toss gently.
Cover each bread slice with a single layer of avocado slices. Top with a piece of salmon. Serve as soon as possible.

2 scallions, diced
1 cucumber, diced
4 radishes, diced fine
2 tablespoons tamari
2 teaspoons sesame oil
1/4 teaspoon garlic, minced
2 tablespoons nutritional yeast
1/2 cup bean or radish sprouts
1/2 teaspoon sesame meal
Cut avocados in half; remove pits and gently scoop out insides, leaving shell intact. Combine the avocados, scallions, cucumbers, radishes, tamari, oil, garlic, and add to shells. Top with yeast, sprouts and sesame meal.
*Sesame Meal: Mix 1/2 cup of sesame seeds and 1/4 teaspoon salt, grind in nut or coffee grinder in 2 tablespoon increments.

CURTIS' QUICK AVOCADO DRESSING
In a blender place peeled avocado, add a pinch of chile powder, juice of one lime, salt and pepper, and add some nonfat yogurt. Thin with ice water if necessary. Blend to a pouring consistency. Serve over mesclun, pink grapefruit segments and diced red pepper.

1 vanilla bean
1 cup sugar
1 avocado
Kosher salt, as needed
1 (8-ounce) bag cornuts
Special equipment: 6 bamboo skewers
Split the vanilla bean pod and scrape out the seeds. In a bowl, combine pod, seeds and sugar and mix well. Cover the bowl and let it sit at room temperature for 24 hours, to infuse the sugar with the flavor of the vanilla
Peel and cut avocado into 6 (1/2-inch) cubes. Lightly salt the avocado.
Put the cornuts in a heavy-duty plastic bag. Using a rolling pin, crush the cornuts. (Don’t crush them too fine.) Transfer the cornuts to a plate.
Slide a avocado cube onto the end of each skewer. Roll the avocado in the cornuts to coat.
Heat the cotton candy machine. Put the vanilla sugar in the extractor. When the cotton candy begins to form, dip the avocado skewers, one by one, and twirl to cover.

You could put it in a chicken quesadilla. Shred some grilled chicken breast and combine it with pepper jack or monterey jack cheese, some green chiles and cilantro (or add whatever you like in your quesadillas.) Top it with sour cream. Delicious!

Beer-Battered Fried Avocado Wedges
3 Cups Lager beer or ale
3 Cups Flour
2 Tbsp Paprika
6 Garlic, large cloves chopped finely
3 Pounds California Avocados
Vegetable oil - for deep frying
Salt - as needed
3 Cups Salsa
To make beer batter, whisk together beer, flour, paprika and garlic until well blended; let stand at least 2 hours.
Peel and cut half an avocado into 6 wedges. Dredge each wedge in reserved beer batter. Deep fry until golden brown, about 3 minutes. Drain well; season with salt. Serve with 1/4 cup salsa or aioli sauce.

Try this salad :
Sliced avocado, pink grapefruit sections, shrimp or crab meat, whole pink peppercorns and a vinaigrette dressing. (Serve it nicely arranged in a large bowl and mix at the table.) It's delicious!
Just put some slices on fresh white bread with salted butter......

Avocado Bread
Ingredients
2 cups all-purpose flour
3/4 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1/2 cup mashed avocado (1 medium avocado)
1/2 cup buttermilk
1/2 cup chopped pecans
Instructions
Preheat the oven to 375 degrees F. Generously grease a 9x5-inch loaf pan. Combine the flour, sugar, baking powder, soda, and salt in a large mixing bowl. Whisk to blend thoroughly. In a separate bowl, beat together the egg and avocado. Stir in the buttermilk. Add to the dry ingredients and blend well. Stir in the pecans. Pour into the prepared pan and bake for 50 minutes to 1 hour or until a wooden pick inserted in the center comes out clean.
Yield: 1 loaf.
They are great on burgers!!!!!!
Ceviche with red onion, avocado and sweet potato
Ceviche is a South American dish of fish marinated in citrus juice and onion, which has a similar effect to cooking, making the fish opaque and firm in texture.
Serves six as a starter.
INGREDIENTS
500-675g white fish fillets, skinned
1 red onion, finely sliced
pinch of dried red chilli flakes
grated rind of 1 small lime and juice of 5 limes
450-500g sweet potatoes
5 tbsp olive oil
3-5 tbsp rice vinegar
1/2-1 tsp caster (superfine) sugar
1/2 tsp ground toasted cumin seeds
1/2-1 fresh red or green chilli, seeded and finely chopped
1 large or 2 small avocados, peeled, stoned and diced
225g peeled cooked prawns (shrimp)
3tbsp chopped fresh coriander (cilantro)
2 tbsp roasted peanuts, chopped
salt and ground black pepper
1. Cut the fish into strips or chunks. Sprinkle half the onion in a glass dish and lay the fish on top. Add the chilli flakes and pour in the lime juice. Cover and chill for 2-3 hours, spooning the lime juice over the fish once or twice. Drain, and discard the onion.
2. Steam or boil the sweet potatoes for 20-25 minutes, or until just tender. Peel and slice, or cut into wedges.
3. Place the oil in a bowl and whisk in the rice vinegar and sugar to taste, then add the cumin, season, and whisk in the fresh chilli and grated lime rind.
4. In a glass bowl, toss together the fish, sweet potatoes, avocado slices, prawns and most of the coriander, and the dressing.
5. Toss in the remaining half of the sliced red onion. Sprinkle with the remaining coriander and the peanuts and serve at once.
AVOCADO SALSA
I AVOCADO
1/2 RED BELLPEPPER
1/2 GREEN BELLPEPPER
1/2 CAN SLICED JALAPENOS
A LIL MINCED ONION & GARLIC
1 LIME
SALT
PEPPER
CHILI POWDER
CHOP UP ALL INGREDIENTS (EXCEPT LIME), ADD SALT, PEPPER AND CHILI POWDER, TOSS, SQUEEZE 1/2 LIME OVER MIX AND TOSS SOME MORE. ADD MORE LIME, SALT, CHILI POWDER OR PEPPER TO YOUR LIKING.
I like to marinate shrimp in lime juice with onions and garlic for a couple of minutes, then the garlic, onion, some sliced jalape?o and stir fry in a hot hot pan, add the garlic and lime juice until it is cooked off then add some salt and black pepper to taste, throw in some sliced avocado and toss, then enjoy with white rice and some salad......
Ingredients
? red chilli, deseeded and finely chopped
1 orange, zest and segments
2 salad onions, finely chopped
1 tbsp olive oil
1 ripe avocado, cut in half, stone removed
shredded salad onion, to garnish

1. Preheat the oven to 200C/400F/Gas 6.
2. In a bowl, toss the chilli, orange segments, chopped salad onions and olive oil.
3. Place the avocado on a small baking tray. Spoon the mixture into the holes and bake for 6 minutes.
4. To serve, serve on a small plate with shredded salad onion.
Fruited Rice Salad
4 cups cooked brown or wild rice
1/4 cup raisins
1/2 cup chopped dried apricots
1/2 cup chopped pecans
2 avocados
Vinaigrette
Chill rice. Pour boiling water over raisins and apricots in small
bowl. Let stand 10 minutes, drain and cool. Heat oven to 350F.
Place pecans on shallow baking pan; bake 5 to 8 minutes. Remove
from oven, set aside. Prepare Vinaigrette. Toss rice, raisins,
apricots, and pecans with Vinaigrette, refrigerate 1 hour. Just
before serving, halve, seed and peel avocados. Fill each half with
rice salad and serve.
Vinaigrette
1/4 cup safflower or vegetable oil
1 tablespoon lemon juice
1 tablespoon red wine vinegar
1 teasoon honey
1/4 teaspoon ground coriander
1/4 teaspoon Dijon-style mustard
Salt and pepper to taste
Shake all ingredients together in tightly covered container.
While you read all these recipies, just squeeze some lemon on top of it and enjoy the bliss as it comes.
Perhaps you could put it into a sandwich from which you priorly took out the tomato.

blend 1 avocado and 1/2 garlic cloves, until smooth, stir in small tub of creme fraiche add 1 teaspoon of white wine vinegar and pepper and stir together, great as a dip or on top of salad.

Spread it on toast, a big slice of beefsteak tomato, fresh ground black pepper. Then top with some freshly torn Basil.
Jenn's Tortilla Bake
Ingredients
1 lb. ground beef
1 Tbsp. Fiesta Party Dip Mix?
1/4 cup water
1 pitted, peeled avocado
Flour tortillas
1 cup refried beans
1 jar Corn, Black Bean Salsa
8 oz. Mexican shredded cheese
Directions
Brown beef; drain and add Fiesta Party Dip Mix? and water. Stir and simmer until water is gone; set aside. Mash avocado; set aside. Place enough tortillas on bottom of greased 9 x 13 baking pan to cover bottom. Spread beans over top; layer with tortillas. Sprinkle with cheese and layer with beef mixture. Add a little more cheese; layer with tortillas. Spread with Corn, Black Bean Salsa; sprinkle with cheese. Place tortillas over top and spread with avocado. Sprinkle remaining cheese over top. Bake uncovered at 350° for 20 minutes. Makes 6-8 servings.

Ingredients
100g/3?oz crabmeat, preferably fresh (substitute drained, canned crabmeat if necessary)
1 mango, peeled and chopped
100ml/3?fl oz sour cream
1 shallot, peeled and finely chopped
1 tsp lemon juice
2 tsp brandy
good pinch sweet paprika
salt and freshly ground black pepper, to taste
8 fresh lettuce leaves, washed and dried
2 ripe avocados, peeled and de-seeded
sprigs of fresh dill and cherry tomatoes, to garnish
Method
1. Using two forks, separate the crabmeat into very small pieces (chop up if necessary) and put in a mixing bowl.
2. Combine the crabmeat and mango pieces and mash together.
3. Add the sour cream, shallot, lemon juice, brandy, paprika, salt and freshly ground black pepper.
4. Stir to combine. Taste and adjust the seasoning if necessary.
5. Arrange the fresh lettuce leaves on a flat serving platter.
6. Place the avocado halves on the leaves and fill with crab mixture.
7. Chill for at least one hour and, before serving, garnish with the dill sprigs and cherry tomatoes. Great for a hot summer day.
Halve it, de-stone it and pile prawn cocktail into each half. Serve with a wedge of lemon.

I like to stuff them with bay shrimp salad. It's super easy! Just cut an avocado in half and remove the pit. Then mix together bay shrimp, mayo and a bit of fresh dill (or cilantro, I use which ever I have in the fridge) and stuff it into the avocado. Yummy and Really easy :)
