Making a grocery list, any meal ideas?

I'm all about delicious quick & easy meals:

-Hobo meals: hamburger patty, seasoning, cut up carrots, potatoes, and onions wrapped in foil and cook for 1 hour at 350; or throw on the grill.

-Crunchy chicken:
4-8 thawed chicken breasts (depending on size)
1/4 c mayo or miracle whip (I like the mayo version better)
1 pkg chicken-flavored stove top stuffing mix
1/4 c (or more) grated parmesan cheese

Coat chicken breasts with mayo. Mix stuffing & parmesan in a pie plate and cover the chicken on both sides, and place on foil-covered baking sheet. Discard the leftover stuffing mix. Cook at 375 degrees for 25-30 min.

-Tacos: (my new favorite variation) spread warmed refried beans on a flour tortilla, then wrap around a hard-shell taco filled with ground beef (cooked with taco seasoning -add a can of corn to the meat, it's delicious!), cheese, lettuce, tomatoes, cilantro, and/or taco sauce.

-Brazilian meal: black beans (with or without hamhocks) over rice, topping with fresh crisp lettuce and a fried egg or two. It sounds weird but it's my family's favorite dish!

Grilled Salmon Steaks with Savory Blueberry Sauce

INGREDIENTS

* 1/2 cup chicken stock
* 1/4 cup balsamic vinegar
* 1/4 cup orange juice
* 1 teaspoon honey
* 1 tablespoon cornstarch
* 1/4 cup chicken stock
* 1 cup fresh blueberries
* 2 teaspoons chopped fresh chives
* 4 (6 ounce) salmon steaks
* 2 tablespoons olive oil
* salt and pepper to taste

DIRECTIONS

1. Pour 1/2 cup chicken stock, vinegar, orange juice, and honey into a saucepan. Bring to a boil over high heat, then reduce heat to medium. Dissolve cornstarch in 1/4 cup of chicken stock, and stir into the simmering sauce. Cook and stir until the sauce thickens and turns clear, 1 to 2 minutes. Stir in the blueberries and chives, and keep warm over low heat.
2. Preheat grill to medium high-heat.
3. Brush salmon with oil, and season to taste with salt and pepper. Grill until the fish flakes easily with a fork, about 3 to 4 minutes per side. Serve with blueberry sauce.

Houston's Grilled Chicken Salad

Lime Dressing:
1/2 cup lime juice
4 teaspoons honey mustard
7 1/2 tablespoons honey
4 tablespoons oil
2 cloves minced garlic
1 teaspoon pepper
1/2 teaspoon salt

Peanut Butter Sauce:
4 tablespoons peanut butter
4 tablespoons soy sauce
4 tablespoons hot water
2 teaspoons sesame oil
1 tablespoon ground ginger

Salad:
mixed greens
carrots
tortilla strips
sliced grilled chicken breast

Mix ingredients for lime dressing, then mix ingredients for peanut sauce. Mix the salad ingredients with the lime dressing. Drizzle peanut sauce on top.


Chicken Breasts Piccata

2 large lemons
2 large garlic cloves
2 tablespoons minced parsley
4 chicken cutlets (1 to 1 1/4 pounds, or 4 to 5 ounces each)
Salt and freshly ground black pepper
1/4 cup all-purpose flour
4 tablespoons olive oil
1/2 cup dry sherry
1/4 cup fresh lemon juice
2 tablespoons capers
2 tablespoons butter

Preheat the oven to 350 degrees F. Slice 1 of the lemons into 8 thin slices. From the remaining lemon, squeeze 1/4 cup juice. Mince the 2 garlic cloves. Mince enough fresh parsley to measure 2 tablespoons; reserve the parsley, covered with a damp paper towel.

Season the chicken cutlets on both sides with salt and pepper. Dredge the cutlets in the 1/4 cup flour. In a 12-inch nonstick sauté pan or skillet, heat the 4 tablespoons oil over high heat until hot. Add the chicken and sauté it 2 minutes on each side, or until golden brown. Transfer the cutlets to a platter, cover, and keep warm.

Add the minced garlic to the pan and cook, stirring, 30 seconds, being careful not to let it brown. Add the 1/2 cup sherry, 1/4 cup lemon juice, and 2 tablespoons capers and combine, stirring and scraping the bottom of the pan with a wooden spoon to release the browned bits. Reduce the sauce over medium-high heat by half, stirring occasionally. Remove the pan from the heat and add the 8 lemon slices. Keep warm, covered.


Steak Kabobs and Wild Rice with Mushrooms

1 pound boneless beef round tip steak, cut 1 inch thick
1/2 small red onion, cut into 3/4-inch wedges
1 small yellow summer squash, cut lengthwise in half then crosswise into 1 inch slices
1 small red or green bell pepper, cut into 1-inch pieces

Marinade:
2 tablespoons water
2 tablespoons coarse-grain Dijon-style mustard
2 tablespoons red wine vinegar
2 large cloves garlic, minced
2 teaspoons vegetable oil
1/2 teaspoon coarse grind black pepper
2 teaspoons vegetable oil
2 cups thinly sliced mixed mushrooms such as cremini or shiitake
1 package (6 ounces) wild rice blend

Cut beef steak into 1-1/4-inch pieces. Combine marinade ingredients. Place beef and marinade in food-safe plastic bag; turn to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.

Heat 2 teaspoons oil large nonstick skillet over medium heat until hot. Add mushrooms; cook and stir until tender. Remove and keep warm. Meanwhile cook rice according to package directions, omitting salt and butter. When rice is done, stir in mushrooms.

Soak eight 9-inch bamboo skewers in water 10 minutes; drain. Remove beef from marinade; discard marinade. Alternately thread beef, onion and squash evenly onto skewers. Place on grid over medium, ash-covered coals. Grill, uncovered, 8 to 10 minutes for medium rare to medium doneness, turning occasionally.

Serve kabobs over wild rice.

Spaghetti and meatballs with salad and garlic bread

Sloppy Joe's and potato wedges...I like to roast my potato wedges with bell pepper and onion makes it like 'hash' sort of.

BBQ chicken and tator tots...or rice and broccoli...or salad and cornbread.

Tacos!!

Pork loin...home-made OR box stuffing, sugar snap peas.

Saturday order out some Chinese or something.

Easy Parmesan Garlic Chicken

1/2 cup KRAFT 100% Grated Parmesan Cheese
1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix
1/2 tsp. garlic powder
6 boneless skinless chicken breast halves (2 lb.)

PREHEAT oven to 400°F. Mix cheese, salad dressing mix and garlic powder.
MOISTEN chicken with water; coat with cheese mixture. Place in shallow baking dish.
BAKE 20 to 25 min. or until chicken is cooked through (170°F).
Jazz It Up
A little Parmesan goes a long way! This flavorful cheese is a great finishing touch for pasta dishes, risotto, meat and vegetable dishes and your favorite salads.

Jazz It Up
For a golden appearance, after chicken is cooked through set oven to Broil. Place, 6 inches from heat source. Broil 2 to 4 min. or until chicken is golden brown.

Cheesy Chicken Simmer
2 tsp. oil
4 small boneless skinless chicken breast halves (1 lb.)
2 cups frozen broccoli florets
1 can (10-3/4 oz.) condensed cream of chicken soup
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
3 cups hot cooked instant white rice

HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 min., turning after 3-1/2 min.
ADD broccoli; stir. Stir in soup and VELVEETA until well blended. Reduce heat to medium; simmer 7 min. or until chicken is cooked through.
SERVE over the hot cooked rice.

it depends if u like to cook or just a simply cooker. the easiest is pasta wit sauce, maybe alfredo or tomato or pesto. or u can took some meat or chicken wit potatoes. u can always go to foodnetwork.com for more ideas

Frittata. Ham.
6 eggs beaten.
1 teaspoon oil.
? cup grated cheese
200g ham.
Tomato.
Salt and freshly ground Black Pepper.
1 table spoon of Fresh chopped parsley.

Heat the fry pan and add oil on a low heat and add cheese, ham, tomato, salt and pepper to beaten eggs and stir in.
Pre heat the grill.
Pour in the egg mixture and cook for 5 minutes. Do not stir.
To finish cooking put under the preheated grill until the top is brown.
Serve sprinkled with the parsley.
