Baking brownies?!
Baking brownies?
Everytime i make brownies, they turn out like cake. It's not flat and it doesn't have the rough look at the surface like most brownies, it also doesn't look as dark and chocolatey as other brownies. Do i have to add anything to it?

Ingredients (makes 12);
225g butter
200g dark chocolate
125g sugar
4 eggs
1 & a quarter teaspoons vanilla essence
225g self-raising flour, sifted
1/2 cup cocoa, sifted
Melt the butter & chocolate in a glass bowl in the microwave on low power. Then combine with the sugar. Beat one egg in at a time. Stir in the vanilla essence, then fold in the flour & cocoa.
Bake in an oven at 180°c/fan oven 160°c/Gas mark 4 for 35 minutes or until set. Allow to cool - then eat!
~for an even tastier treat, make a topping out of 100g caster sugar, 75g smooth peanut butter, and 50g unsalted butter. Then spread on the brownies. Delicious! ~

Ingredients:
1 2/3 cups granulated sugar
1/2 cup (1 stick) butter or margarine
2 tablespoons water
2 bars (4 oz. total) NESTLé? TOLL HOUSE? Unsweetened Chocolate Baking Bars, broken into pieces
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped nuts, (optional)
Directions:
PREHEAT oven to 350° F. Grease 13 x 9 inch baking pan.
MICROWAVE sugar, butter and water in large, microwave-safe bowl on HIGH (100%) power for 4 to 5 minutes or until mixture bubbles. Remove from heat. Add baking bars; stir until melted.
ADD in eggs one at a time until blended. Stir in vanilla extract. Add flour, baking
soda and salt; stir well. Stir in nuts. Pour into prepared baking pan.
BAKE for 15 to 20 minutes or until wooden pick inserted in center comes out slightly sticky. Cool in pan on wire rack.
FOR SAUCEPAN METHOD:
HEAT sugar, butter and water in medium, heavy-duty saucepan stirring constantly just to boiling. Remove from heat. Add baking bars; stir until melted. Proceed as above.
make it easy on yourself. go to the refrigerated part of your grocery store, and pick up some pilsbury brownie mix in a "tube" and just put it in the pan & bake. there's no thinking put into it, or time.

I'm not sure what the ingrediant is but here is my brownies recipe, maybe compare to yours.
1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
Bake in preheated oven for 25 to 30 minutes.
This is the recipe I use, it is from the Fanny Farmer Cookbook
Brownies
3 oz. unsweetened chocolate
6 tablespoons butter
1 1/2 cups sugar
3 eggs
1/4 teaspoon salt
3/4 cup flour
3/4 cup chopped walnuts
1 1/2 teaspoons vanilla
Preheat the oven to 350 degrees Fahrenheit. Butter a 9 inch square cake pan. Melt the chocolate and butter in a bowl or pot over simmering water, stirring until smooth. Combine well. Spread in the pan and bake for about 40 minutes, until dry on top and almost firm to the touch. Set the pan on a rack to cool for about 15 minutes, then cut the brownies into squares approximately 2 1/4 inches. Sprinkle with powdered sugar. Makes 16 brownies.
Note - make sure not to burn the chocolate, and cool it a bit before adding the other ingredients. Use a light hand to stir all together, never overbeat brownies.
i like baking brownies and sometimes i failed as well. they turned out cake like as you mentioned. but here is recipe that worked for me. if you follow the url, you can see the picture
Quick Brownies
* 12 tbsps margarine
* 2 handful sweet chocolate chip
* 4 squares unsweetened baking chocolate
* 1 cup sugar
* 3 eggs
* 1 heaping tbsp vanilla
* 1 cup flour
- Preheat oven 350 F
- Line alumunium foil on a baking sheet, grease with margarine OR lightly greased and floured the baking sheet
- In a microwave proof bowl, melt margarine with baking chocolate and chocolate chips, on high, for about 2 minutes, until margarine melt well. Take out, keep stirring until all chocolates melt.
- Stir sugar into chocolate mixture until well blended. Mix in eggs and vanilla. Stir in flour until well blended. Pour and spread batter in prepared pan.
- Bake for 20-30 minutes or until a knife inserted in the middle comes out clean.
If you're baking from a box, there is usually two different recipes. One for cake-like brownies and one for chewy. Baking is an exact science so make sure your measurements, ingredients and temperatures are accurate. Follow the recipe EXACTLY.
