There are a few variables to your question, so I will answer the best I can! Oils are generally used to help add flavor - unless you are using a neutral oil, such as vegetable oil. Oils also help to evenly distribute the other flavorings, herbs and spices, giving your meat or fish an even flavor all around. But keep in mind that if the meat is already fatty, a lot of extra oil is not necessary and could end up making your dish unnecessarily greasy. Other than that, oil will not typically ruin your food. It is more likely to be fruit juices (acids) or vinegars that can "over-breakdown" your foods and give you less than stellar results!
Oil helps the marinade penetrate the meat. I don't think it can ruin the food, at least it never has for me.
