i don't know what is Sarvana Bhavan but
i can give you the recipe of Sambhar
South Indian Sambar Recipe - eaten with dosa or idli and coconut chutney.
Ingredients:
1 cup tuvar dal
2 cups water (or more if reqd - just an inch over the level of the dal)
2 onions, sliced
2 tomatoes, chopped
salt
1/2 teaspoon turmeric powder
2 green chilies, slit
1/2 inch gingerroot (minced)
2 brinjals, chopped
1 small yam (skinned and cut into bite sized pcs)
1 small red pumpkin (a small pc cut like the yam)
3 French beans (stringed and cut into pcs)
1 carrot (peeled and cubed)
2 drumsticks
2 tablespoons oil
4-6 cloves garlic, with skin
1/4 teaspoon asafetida powder (hing)
1 teaspoon tamarind pulp, soaked in water
2 teaspoons sambhar powder (I use MTR sambar powder)
curry leaves
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
cilantro leaves (to garnish)
Method:
1.
Put all the ingredients from the dal to the carrot into a pressure cooker and cook for one whistle and simmer for 3 mins and take the cooker off the heat till the pressure subsides.
2.
Take out the cover and add the drumsticks, sambar powder and extract of the tamarind.
3.
Put the cooker back on the fire without the weight and boil till the drumsticks cook In a small fry pan heat oil.
4.
Add the hing, curry leaves, mustard and cumin seeds and the garlic (just hit them a little to break the skin).
5.
Heat till the cumin and garlic are browned slightly.
6.
Add to the cooked dal and stir to mix Garnish with chopped cilantro.

SAMBHAR
Ingredients:
2 Cup Tuvar Dal
3 Red chilles
3 Green Chilles
1/4 tsp. Methi
1 tsp. Sambhar powder
Curry leaves a few
Hing a small pinch
Salt 1 tsp. Salt (or to taste)
Cooking Oil
2 tsp Mustard
1/2 tsp Turmeric
1/4 tsp. Tamarind paste
2 tsp. Vgetables( Drumstick,Green Pepper,Eggplant,Okra)
Washed and diced
Method:
* Cook Thuvar dhall and turmeric with extra water and separate the two, and keep them aside.
* Cook the vegetables in thuvar dhall water, and add turmeric and salt to this.
* After this is cooked, add tamarind paste.
* Heat some oil in a pan, splutter mustard, then add methi, red chillies, green chillies, curry leaves, hing, turmeric, and sambhar powder and keep frying for a few minutes.
* Add this to the boiling vegetables.
* Add the thuvar dhall and let it cook for a few more minutes.

TRADITIONAL SAMBHAR
Ingredients
1 large onion, chopped finely(I sometimes also use
1 cup small whole round boiling onions)
1 cup toor dal
1 medium tomato, chopped
2 tsp sambhar powder( see "Pickles and Spice Mixes " section)
1 tsp fresh coriander leaves, chopped
1/4 cup thick juice of tamarind
1/2 tsp sugar or jaggery water
1/2 cup green beans, cut into long pieces
1 tsp mustard seeds
1 sprig curry leaves
1 tablespoon ghee(clarified butter)
A pinch of hing(asoefetida)
Salt to taste
Method
Pressure cook the dal, onions, green beans and tomato
till done.The dal should be soft and mushy.
Set aside.
Add the sambhar powder, sugar(jaggery), coriander leaves,
tamarind juice and salt to taste.
Bring to a boil on a low flame.
Season with mustard, curry leaves and hing using ghee.
Eat hot with dosa or plain white rice.

Ingredients:
1 cup Toor Dal
1 tsp Tamarind
3 tsp Salt
a pinch Turmeric
2 tsp Channa Dal
3 tsp Dhania seeds
1 pinch Hing
3 Red chilies
1/4 cup Grated coconut
1 tsp Mustard
10 Coriander leaves
1 Green peppers cut into pieces
1 Onion chopped
1 Tomato cut into pieces
Method:
Boilthe toor dal with 3 cups of water.
Fry channa dal, dhania seeds, hing, and red chilies for a few minutes, and then fry them
with the grated coconut. Grind the above mixture with water.
Fry the green pepper in oil for a few minutes. Boil the tamarind paste, water, salt,
turmeric, tomato and vegetables.
Add turmeric and the sale, cook for about 5 minutes. Add boiled dal and bring
it to a boil
In the meantime fry the mustard seeds and onion.
Add the above ingredients & coriander leaves to the mixture.
Serve hot
sorry i don't have it
but Sarvana bhavan's food os really delicious I had it at connaught palace several times
the same incrediants as sambar and kurma but they add something else which makes their food delicious .
i am just looking to earn two points.thanks
