a friends mother makes it for thanksgiving and christmas every year and will not give up the recipe

Italian Creme Cake

Ingredients:
1/2 cup butter, softened
1/3 cup shortening
1 3/4 cups sugar
4 egg yolks (whites used later in recipe)
1 teaspoon vanilla
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup buttermilk
3/4 cup finely chopped pecans
4 egg whites
12 ounces cream cheese
6 tablespoons butter
1 1/2 teaspoons vanilla
6-7 cups confectioners' sugar
1/2 cup coconut, toasted
Pecan halves (optional)

Steps:
1. Grease and flour three 8- or 9-inch round baking pans.

2. Preheat oven to 350°F.

3. In large bowl, beat butter and shortening with mixer until combined.

4. Add sugar; beat on medium speed until light and fluffy.

5. Add egg yolks and vanilla; beat well.

6. In another bowl, combine flour, baking powder and soda.

7. Add dry mixture and buttermilk alternately to butter mixture, beating on low after each addition just until combined.

8. Stir in chopped pecans.

9. Thoroughly wash and dry beaters.

10. In clean bowl, beat egg whites with mixer on high speed until stiff peaks form.

11. Stir about one-third of egg whites into the cake batter, then fold in remaining whites.

12. Divide batter evenly between prepared pans.

13. Bake at 350°F for 18 to 30 minutes (depending on size of pan and oven temperature) until wooden toothpicks inserted near centers come out clean.

14. Cool on wire racks for 10 minutes.

15. Remove from pans and cool completely on wire racks.

16. Make Cream Cheese frosting: In medium bowl, beat cream cheese, 6 tablespoons butter and 1 1/2 teaspoons vanilla until smooth.

17. Gradually stir in powdered sugar until frosting is right consistency for spreading, beating until smooth.

18. (Makes about 4 cups frosting).

19. Assemble cake, frosting between layers and top.

20. Sprinkle top with toasted coconut and garnish with
pecan halves.

21. Cover loosely and store in refrigerator.

22. This cake can also be baked in a 9 x 13-inch pan (35 to 40 minutes cooking time).

23. If you make 9 x 13-inch cake, you will only need half of frosting recipe.

Mix everything for frosting together until creamy.

Creme together sugar, crisco, butter, and egg yolks, add one at a time, beating well after each.

Add soda to buttermilk then add alternately with flour, buttermilk, flour, etc.

Beat egg whites until stiff peaks form then fold into cake batter.

LAST, add coconut, pecans, and vanilla.

BAKE 350F degrees for 35-40 MINUTES.

1 (1 lb) box confectioners' sugar

1. Make cake layers:.
2. Preheat oven to 375°F and lightly butter and flour three 9-by 2-inch round cake pans, knocking out any excess flour.
3. In a bowl with an electric mixer beat together sugar, shortening, and margarine until light and fluffy.
4. Add egg yolks, 1 at a time, beating well after each addition.
5. Into another bowl sift together flour, baking soda, and salt.
6. Beat flour mixture into egg mixture in 2 batches alternately with buttermilk, beginning and ending with flour mixture, until combined.
7. Beat in vanilla, coconut, and chopped pecans.
8. Beat egg whites in another bowl until they just hold stiff peaks and fold into batter gently but thoroughly.
9. Divide batter among pans, smoothing tops, and bake in upper two thirds of oven, switching position of pans in oven halfway through baking, until a tester comes out clean, about 30 minutes.
10. Cool cake layers in pans on racks 10 minutes and invert onto racks to cool completely.
11. Make frosting:.
12. In a bowl with an electric mixer beat together cream cheese, margarine, and vanilla until smooth.
13. Gradually beat in confectioners' sugar, beating until creamy.
14. Stack cake layers on a cake plate, spreading about 1/2 cup frosting between each layer.
15. Spread remaining frosting on top and side of cake.

1 1/2 cups PLUS 1/2 cup sugar, divided use
5 eggs, separated
2 cups all-purpose flour
1 teaspoon baking soda
1 cup buttermilk
1 1/2 teaspoons vanilla flavoring
7 ounces coconut
1 cup chopped pecans

Preheat oven to 350 degrees. Grease and flour 3 9-inch round cake pans; set aside.

In a large mixing bowl, cream the butter and 1 1/2 cups sugar until light in color. Add egg yolks and beat until light in color. In another bowl, mix together the flour and soda. Add flour mixture and buttermilk alternately to butter mixture, beginning and ending with flour.
Stir in vanilla, coconut and nuts by hand; set aside.

In a separate bowl, beat the egg whites until limp and thin. Add the 1/2 cup sugar to egg whites and beat until stiff peaks form, but are not dry. Fold into the prepared batter. Pour into prepared pans. Bake on middle oven rack for 25 minutes, or until toothpicks come out clean. Cool in pans 10 minutes then invert onto wire racks to cool completely.

ICING:
1 1-lb. box of powdered sugar
8 oz. cream cheese, softened
1/2 stick butter
1 teaspoon vanilla
1 1/2 cups pecans, chopped, optional

In a mixing bowl, beat the cream cheese and butter until well blended. Beat in the powdered sugar. Stir in vanilla until combined. Spread between layers and on top and sides of cooled cake. Sprinkle with pecans if desired.
