Chicken Pasta with Broccoli
Ingredients:
12 ounces penne or rigatoni pasta
1/2 lb fresh broccoli florets
1/4 cup olive oil
2-3 cloves garlic, minced
2 tablespoons pesto sauce
1 (10 ounce) can diced tomatoes, undrained
3/4 cup grated parmesan cheese, more to taste
1 lb boneless chicken breast halves, cooked and chopped
1 pinch red pepper flakes (optional)
Salt
Ground black pepper
Fresh basil, chopped for garnish
Steps:
1. In a large pot with boiling salted water cook pasta according to directions until al dente.
2. Drain.
3. Meanwhile, blanch broccoli florets in a medium size saucepan for 2 minutes.
4. Drain and rinse with cold water to stop the cooking.
5. In large saute pan add the minced garlic and pesto sauce and olive oil, cooking over medium high heat for for 2 minutes.
6. Add the chopped tomatoes, broccoli, cooked chicken, salt and pepper and red pepper flakes.
7. Stir to mix well and until heated.
8. Add cooked pasta to saute pan and stir to blend.
9. Add Parmesan cheese, fresh chopped basil and serve warm.

INGREDIENTS
8 cups broccoli florets
1 (16 ounce) box BARILLA Penne
1/4 cup extra virgin olive oil
4 cloves garlic, minced
1/2 large onion, chopped
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/2 teaspoon salt
2 tablespoons grated Romano cheese
Ground black pepper
DIRECTIONS
Bring 4 to 6 quarts of water to boil. Add broccoli; cook until tender, but still firm. Remove broccoli with slotted spoon; set aside.
Return water to boil. Cook Penne according to package directions; drain, reserving 1 cup cooking water. Return Penne to pot.
Meanwhile, heat oil in large skillet over medium heat. Add garlic and onion; saute 3 to 4 minutes or until onion is tender, stirring occasionally. Add chicken; cook until no longer pink, stirring occasionally. Stir in broccoli and salt; cook until broccoli is broken down but still green, stirring occasionally.
ADD hot Penne and reserved cooking water to broccoli mixture. Add cheese; toss. Serve immediately on individual dishes; top with pepper, to taste.

3 boneless skinless chicken breasts
1 tablespoon butter
1 cup white mushrooms, finely diced
1 cup broccoli florets, finely diced
1 cup tomatoes, finely diced
1 teaspoon garlic salt
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon sage
1 cup homogenized milk
1/4 cup chicken broth or water
1/4 cup white enriched flour
1 tablespoon parmesan cheese
1/4 cup grated mild cheddar cheese
4 cups whole wheat pasta, cooked and drained
1. Dice raw chicken into bite-size pieces, small enough for baby to manage.
2. Clean cutting board thoroughly, dice mushrooms, broccoli and tomato to same size chunks.
3. In large saucepan, cook chicken with mushrooms and spices over medium heat, until chicken is thoroughly cooked.
4. Add broccoli and tomatoes, cover and reduce heat to low until broccoli is tender.
5. Add chicken broth, allow to simmer while you mix milk, flour, parmesan and grated cheese in small bowl.
6. Add mixture to saucepan, stir continuously until grated cheese has melted and blended well into sauce.
7. Add cooked and drained pasta, toss and serve.

Easy Easy Chicken Pasta With Broccoli
1 Box (1 lb.) pasta of your choice
1 lb. bag frozen broccoli florets or cuts
1 lb. fresh chicken, cut into bit sized pieces
1 can condensed cream of chicken soup
1 can condensed cream of mushroom or celery soup
1/2 soup can of milk
salt and pepper if desired
cheese for topping
The preparation of the broccoli and pasta will take place at the same time as the chicken/sauce preparation.
Boil a large pot of water with a little oil and salt. Add pasta and broccoli. When water returns to boil, cook for directed time (about 10 minutes). Drain and return to pot.
Meanwhile brown chicken in skillet with oil or non-stick spray. Season with salt and pepper as desired. When chicken is cooked, add both cans of condensed soup, and 1/2 soup can of milk. Add more liquid (milk or water) as desired. Stir, bring to boiling, and reduce to simmer. Let the mixture simmer while pasta and broccoli is cooking.
Add chicken and sauce mixture to pasta and broccoli. Mix well. Serve. Top with cheese if desired.
NOTE: Don't be afraid to play with seasonings that suit your taste. Add onions, peppers, mushrooms, or anything else you want while cooking the chicken.
