How long do i cook a beef brisket in a charcoal smoker? how long per pound?

i just got this new smoker and im not sure how long to cook this per pound. any help would be very much appreciated.


Answers:
Keep the temp around 210-220 and smoke it about 6 hours. Tightly wrap brisket in foil and continue cooking until very tender, 1 to 2 hours more.

I would also marinate the heck out of it prior to smoking it.

1 cup red wine vinegar
1/2 cup olive oil
1/4 cup Worcestershire sauce
1/4 cup brown sugar
4 cloves garlic, minced
2 tablespoons paprika
1 tablespoon kosher salt
2 teaspoons black pepper

Combine all ingredients and mix until the sugar is completely dissolved. Marinate Brisket overnight. Discard marinade when done.

You will also need 4 to 6 cups hickory or apple chips or wood chunks, soaked in water to cover for 1 hour, then drained, put in aluminum foil (poke a couple small holes in the foil). Put the foil pack on top of the charcoal. The foil keeps them from burning up, but lets the smoke out (hence the holes).

i cook brisket all the time in my smoker. i let it cook at around 200 to 250 degrees and add hickory smoke to it. i cook it for at least 18 hours. don't use the hickory smoke for the whole time though. use the smoke for the first 6 to 8 hours. it's possible to get too much smoke flavor. it will char black and look burnt. that's ok. because when you slice it against the grain it will look great and taste even better. try to slice it thin, use a sharp knife. the outside of each slice will be black and the red smoked part known as "candy" will permeate into the meat. btw, i always use a good "rub" on the meat first. you can look rubs up on the Internet and find one that appeals to you. i usually cook a 15 to 20 pound brisket. hope this helps, chef Paul
