I have a 3 lb roll of ground beef and I only need 1? How do I measure it?

Use your eyes and divide it into 3. 2/3ds may be slightly larger or smaller, but it won't be that much of a difference that you need to measure to the exact millimeter or microgram.
If you're using the same recipe again - divide what's left over in half and freeze in a tightly sealed freezer bag and write the date it was frozen eg 06/16/2007
a kitchen scale will give you the exact measurement. If you do not have a scale, try measuring the length of the packaged meat and divide that number by three. The result will be the measurement that you want to cut the package at. So if it measures nine inches, just cut the chub of beef at three inches. That will give you an approximated pound of beef.

Take the meat out of the chub. Use scales to make one pound packages of meat. Wrap and freeze two of them so you can use the third for your meal you planed. I have been doing this for lots of years not only with ground beef but whole chickens [cheaper] cutting some up and putting them away in freezer for latter. The same with veggies - kinda like canning.
