Coffee Cake Dough

Ingredients:
1 cup milk
1/2 cup lard or butter
1/4 cup water
1 egg, beaten
1/2 cup sugar
1 teaspoon salt
1 (1/4 ounce) package dry yeast
4-4 1/2 cups flour

Steps:
1. Scald milk.

2. Stir in sugar, salt and lard.

3. Cool to lukewarm.

4. Measure water into large warm bowl.

5. Sprinkle in yeast, stir until dissolved.

6. Stir in milk mixture, egg and half of flour.

7. Beat until smooth.

8. Add remaining flour to make a stiff batter.

9. Cover loosely.

10. Keep in cool place for at least 2 hours.

11. (Dough may be kept in refrigerator up to 3 days).

12. Take 1/2 of the dough and pat dough into a greased 13" x 9-1/2" x 2" pan, pushing dough up pan sides to form a ridge.

13. Add the coffee topping of your choice.

14. Cover and let rise until doubled (45 to 60 minutes).

15. Bake at 375° for 35 minutes or until done.

Coffee Angel Food Cake
For the cake:
1 cup cold water plus 1 tablespoon
3 tablespoons Mexican coffee flavored liqueur (recommended: Kahlua)
1 tablespoon instant coffee (recommended: Folgers)
1 (16-ounce) box angel food cake mix (recommended: Betty Crocker)
2 tablespoons cocoa powder (recommended: Hershey's)

For the icing:
1 (1-pound) box powdered sugar, sifted (recommended: C and H)
1/4 cup milk
2 tablespoons orange liqueur

For garnish:
1 orange, zested

Move oven rack to lowest position. Preheat oven to 350 degrees F.

Combine the water, Mexican coffee flavored liqueur, and instant coffee in a medium mixing bowl. Stir until coffee crystals have dissolved.

Add cake mix and cocoa powder and using an electric hand mixer, beat on low speed for 30 seconds; then beat on medium speed for 1 minute. Pour into an ungreased 10 by 4-inch tube pan. Bake in preheated oven for 37 to 47 minutes or until top is a dark golden brown, cracked, and not sticky.

Remove from oven and immediately turn pan upside down onto a bottle until cooled completely. Run knife around edges of pan and remove cake from pan.

For the icing: Whisk together all ingredients in a medium mixing bowl until smooth. Pour icing evenly over the top of the cake letting it run down the sides of the cake. Let icing set for 1 hour. Slice cake and serve garnished with orange zest.

8 oz flour
Pinch of salt
1 oz butter
1/2 oz yeast
Milk and water
1 egg
Grated nutmeg
1/2 oz peel
1 oz sugar
2 oz currants

Method
Sieve flour and salt and rub in fat.
Mix yeast with a little warm milk and water, add to flour, with rest of ingredients, and mix to a soft dough with remaining liquid.
Beat very thoroughly, put into greased and warmed loaf tin, half filling it and allow to rise in a warm place until the dough reaches the top of the tin.
Bake at 375 F for 30 mins
