We are catering our own wedding reception and have a big menu planned...I really don;t want to not have enough food but then on the same hand....I don;t wanna spend more than i really need..and have tons of leftovers that might go to waste... We are serving meatballs, h/t sandwiches, mac n cheese, chees balls, cole slaw, potato salad, chips, cheese cubes, fruit tray and veggie trays...Just was wandering how to decide exactly how much to buy of each veggie... Planning on having carrots, celery, peppers, califlower, broccoli and cukes... Any help in planning my shopping list.. Thank you.

In planning a menu for that many people you will need to figure at least 2-3 oz. per person or 28 lbs. or so of mixed veggies if there will be no other food served. If this is an appetizer figure the low end at 23 lbs. The bulk should be favorites in your area.

Plan on veggies that are easily hand-held and dipped. Celery, carrot stix, green onions, broccoli, cauliflower, strips of sweet bell peppers in all colors, radish rosettes, ice cycle radish sticks, cucumber chips as scoops.
