Ten Minute TVP Taco Recipe
INGREDIENTS:

* 2 cups TVP
* 2 cups water
* 2 tbsp soy sauce
* 2 tbsp olive or vegetable oil
* 1 package taco seasoning
* 1 red or yellow bell pepper, cut into strips
* 1/4 cup salsa
* flour tortillas or taco shells

PREPARATION:
In a large skillet, heat the water over medium heat, and add the TVP, stirring well. Allow the TVP to reconstitute for 2-3 minutes.

Add oil and soy sauce, then peppers and taco seasoning, stirring well.
Allow to cook for another 3-5 minutes, stirring frequently. Mix in salsa and remove from heat.

Serve wrapped in a flour tortilla or hard taco shells. I like to eat this as is, but you could also add tomatoes, lettuce, beans and sour cream to your tacos.

We use black beans in place of the meat. If you can plan ahead, use the dry variety (soak overnight, as per the instructions on the bag) or you can use the canned variety.
I pour a little olive oil in the skillet, toss in the beans with chopped onion, chili powder, cumin, garlic (anything you like) and use it as the taco base instead of beef.

4 heads garlic, unpeeled
4 ears sweet corn, unshucked
Corn tortillas
2 tablespoons olive oil
5 limes, juiced
1 orange, juiced
Generous pinch sea salt
White (or black) pepper, to taste
1 generous teaspoon chile powder (or more to taste)
1 small red (or green) pepper, seeded and diced
1/2 red onion finely minced
Bunch cilantro, leaves chopped
3 or 4 ripe avocados, thickly sliced
Carton cherry tomatoes


Slice off tops of garlic. Place in foil; drizzle with olive oil, salt, and pepper. Close foil loosely and place on grill.
Remove most of husk from corn leaving only the thin pale green husk layer. Peel back husk removing silk; replace husk. Roast corn turning as needed (about every 2 minutes) until corn is golden brown, approximately 10 minutes. Remove from grill.

Stack tortillas in foil; sprinkle with a little water from fingertips. Close foil and place on grill to warm.

Whisk together in medium bowl olive oil, lime juice, orange juice, sea salt, pepper, and chile powder.

While corn is still warm shuck and remove from cob. Mix with olive oil/lime juice mixture. Add red pepper, onion, and cilantro.

Check the garlic - it's done when yields to soft pressure and is nicely browned. Squeeze out roasted garlic and spread on warmed tortilla. Fill tortilla with corn mixture. Add slices of avocado and garnish with tomatoes.

There's a box mix, the brand is "Fantastic," that my mom uses and we all love it. They also have a vegetarian Sloppy Joe mix which is great, and other things, too.

Smoky beans and greens filling for soft tacos

1 good bunch fresh spinach or green Swiss chard

2-5 chipotles in adobe

About 3 cups of refried beans (refried black beans are better here, but any will do in a pinch. This recipe is a great reason why you should always make a BIG batch of refried beans up and freeze the extras for future meals!)

Cheese, queso fresco, monetary jack or mozzarella

Good fresh tortillas


Wash your greens, and try to shake off all the excess water. If using young fresh spinach, don't bother trimming of the stems, but if using older spinach with woody stems, trim off as much as you can. If using chard, trim of all the stems leaving only the greens.

Heat a couple Tbls of oil in a big pan (a wok works great here) and when hot, add all the greens and stir fry until softened a bit. Add in your chipotle chiles (with a good spoonful of the rich adobo sauce from the can) and mash the chiles up with a spoon. Add the beans and stir it all together until warmed throughout.

Taste for salt. Even if your beans were perfect before, you have diluted them with the greens, and probably need a bit more salt added.


That's it!


Serve these family style in a serving bowl on the table, with tortillas laid out beside. Have grated cheese available, fresh cilantro and shaved onions, whatever salsa you like, sour cream and some hot sauce. People will love assembling their own soft tacos.


This is such a healthy meal, but it's so flavorful you won't feel as though you're suffering!
