Is it safe to eat raw tuna?
I've just bought a raw tuna fillet from waitrose and I intend to make sushi. Do I cook the tuna or leave it raw? Will it make my friends sick if I don't cook it?

You need to use sushi-grade tuna to make sushi - it assures that it is extremely fresh and top quality...you do not want to use just any tuna if you are going to eat it raw.
If you do not have sushi grade, I would sear it first and then use it...you can leave the inside pink.
Yes, you can put it in sandwiches and salads
all depends on how fresh it is. I'd make sure I knew how fresh the fish was before I tried to make sushi with it.

It's safe as long as not full of mercury, otherwise there would be no Japanese and no sushi bars. But it needs to be really fresh.

squeeze lemon over it with some dill and tarragon and leave for an hour or so its better than sushi

NO ... it's sushi. Don't cook it if it's "sushi grade". It won't make your friends sick if they like sushi.
