These are the BEST Blueberry Muffins and Simple to make

Ingredients

1/2 cup butter
2 eggs
2 cups flour
1/2 teaspoon salt
1 1/4 cups sugar
1/2 cup milk
2 teaspoons baking powder
1 1/2 cups blueberries

Directions
On slow speed, cream the butter and sugar.

Add eggs one at a time and mix until blended.

Sift dry ingredients and add alternating with milk.

Mash 1/2 cup blueberries and stir in by hand.

Add rest of blueberries, whole.

Fill muffin cups high and sprinkle with sugar. Bake 375 F, 25-30 minutes.

Remove from pan carefully.

**My friend puts a little Orange Zest in them but I don't

BLUEBERRY CREAM CHEESE MUFFINS

2 c. whole wheat flour
1 tsp. salt
1/2 tsp. baking soda
1 egg, beaten
3/4 c. honey
2 tbsp. vegetable oil
3/4 c. milk
1 c. fresh or frozen blueberries, thawed & drained
1 (3 oz.) pkg. cream cheese, cut into 16 pieces

Combine flour, baking powder, salt and baking soda. Mix together in a separate bowl egg, honey, oil and milk. Add to dry ingredients. Mix until just moist, fold in berries. Fill greased muffin cups 1/3 full. Place a piece of cream cheese on each cup. Cover with remaining batter. Bake at 400 degrees for 15 to 20 minutes. Serve hot.
Makes 16 muffins

Blueberry Crumb Muffins
2 cups unbleached all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 stick unsalted butter
1 teaspoon lemon, lime, or orange zest
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
2/3 cup sugar
2 large eggs
1/4 cup milk
1/4 cup orange juice
1 pint blueberries
Topping
2 tablespoons melted butter
3 tablespoons flour
1 tablespoons oatmeal
2/3 cup brown sugar
1 tsp cinnamon
Combine the flour, baking powder, and salt into a medium bowl and set aside.
In a separate bowl cream the butter, zest, vanilla and almond extracts, and sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Beat in the orange and then the milk in the same way. Be sure to scrape down sides of the bowl.
Using a rubber spatula, fold in about 3/4 of the dry ingredients into the wet ingredients, taking care not to over mix.
Place well-drained blueberries into remaining dry ingredient, coating the berries. Fold the berries into the remaining mixture.
Divide the batter evenly into a paper-lined muffin pan.
Combine the topping ingredients. Topping should be crumbly. Sprinkle on tops of the muffins.
Bake at 375 degrees for 25 minutes.

Got this recipe from Pittsburgh Post-Gazette in 2003. Really easy and delicious. Note: If you can't find orange creme yogurt, substitute with plain yogurt and the zest of 1 washed orange.

2 1/2 cups flour
3/4 cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup orange creme low-fat yogurt
2 teaspoons grated orange zest
2 eggs lightly beaten
1 1/2 cups blueberries (can use frozen berries)

Combine flour, sugar, baking powder, soda and salt. Blend in butter. I find the easiest way is to use a normal cake mixer to distribute the butter through the dry ingredients.

Add Yogurt, orange zest and eggs. Mix until ingredients are just moistened. Then gently fold in the Blueberries.

Spoon into greased muffin pans or use muffin pan liners. Bake at 375F for 20-25 minutes. Makes about 18 standard-size muffins.

I make BRAN MUFFINS--- WITH BLUEBERRIES.
1 cup all bran cereal
3/4 cup brown sugar
1 cup all purpose flour
1 egg
1/3 cup canola oil
1 cup milk
1 tsp baking powder
1/4 tsp baking soda
1-1 1/2 cup blueberries. Add blueberries by folding in last gently with a spoon.
If the batter is thin add a little more all bran cereal
Bake at 350 degrees in a muffin tin lined with paper muffin cups for 1/2 hour.
Substitutes
apples, raisins for blueberries if desired.
They are moist and delicious.

Actually I got my blueberry muffin recipe came from the internet. What makes it better than most is before baking you make a struesal type topping and bake them. The topping falls down in the muffin and makes them so delicious !!! I will not make any other type of muffin ever again.

Lemon & Berry Muffins
Makes 12 Muffins

1 lemon
250g (9oz) self-raising flour
1 tsp bicarbonate of soda
150g (5oz) caster sugar
90ml (3 floz) sunflower oil
150g (5oz) carton low fat lemon flavoured Yoghurt
2 medium eggs
150g (5oz) fresh berries
75g (3oz) icing sugar
You will also need a 12-hole muffin or deep bun tray

Put a muffin case in each hole and heat oven to 190°C/375°F/gas mark 5.
Grate the zest of the lemon
Sift the flour & bicarbonate of soda into a large mixing bowl & stir in sugar.
Make a hollow in middle of mixture.
Measure the oil into a jug. Add yoghurt & zest. Cut the lemon in half & squeze out the juice. Add the lemon juice to the oily mixture.
Beat the eggs and add them to the oily mixture too. Mix the ingredients until well blended.
Pour the oily mixture into a holly in the dry ingredients. Stir all the ingredients together for a few seconds, then add the berries gently.
Spoon mixture into cases and bake for 15-18 minutes, until they are golden & firm to the touch.
Sift icing sugar over them for decoration.

++ To make lemon icing++
1 lemon
125g (5oz) icing sugar
Sift the icing sugar into a bowl then squeeze the juice from one half of the lemon.
