Caribbean dishes please!?
I am going to be working on a food stall for my daughter school fate and am doing a caribbean stall, I am not sure what and how to cook it!!
I am also having a party very soon and I want to cook caribbean food for that too, I really need help for rice, peas and chicken, I need recipes galore!!!!
Oh I also need recipes for any caribbean drinks/juice things like that.

Real Goat Curry (but you can use Mutton)
Note to person who says goat is mutton in England. An old recipe using Mutton in New Zealand was called Colonial Goose. People have wierd ideas lol.
For a meal serves 8-10
1 Lemon or Lime Juice
2kgs (4 pounds approx) Goat shoulder meat
2 teaspoons Allspice (heaped)
3 Tablespoons Curry powder
2-3 Spring (Green) onions
4 Tomatoes, chopped
2-3 Onions, chopped
4-5 Red Chillies, left whole
2 Cloves of Garlic, finely chopped
2 Knobs of fresh ginger, finely chopped
1 teaspoon paprika
Salt and Freshly ground Black pepper
2-3 Springs of Thyme
1-2 Bay leaves
Oil for frying
500 ml Hot water (2 cups approx)
125ml Lite Coconut Milk (1/2 cup approx)
Wash the meat, adding the lemon or lime juice to the water.
Chop the meat into large chunks, keeping the meat on the bones to maintain sweetness.
Make a marinade of allspice, curry powder, spring onions, onion, tomato, chilli, garlic, ginger, paprika, salt and pepper. Season the meat with this marinade and add the thyme and bay leaves. Make sure the meat is thoroughly covered with all the ingreditents. Marinade for 3-4 hours.
Remove meat from seasoning, shaking off any excess. Reserve marinade mix because it's added again after frying and browing.
Fry meat in oil until brown.
Add water and reserved marinade spices to meat and cook over a very gentle heat for 1 1/2 to 2 hours. Add coconut milk just before serving and heat through.
Serve with Rice and Peas. Have fun trying all the suggestions you'll get. Food, like music, is an international language we all enjoy:)

Banana-Coconut Bread
Ingredients
3/4 cup sugar
? cup marg
2 eggs
1 cup mashed bananas
? cup shredded coconut
2 cups flour
2 teaspoons baking powder
? teaspoon salt
? teaspoon baking soda
1 cup chopped pecans or walnuts (optional)
Method:
Preheat the oven to 350 degrees.
Mix the sugar, marg, and eggs together and then beat the mixture until light and fluffy. Add the mashed bananas and coconut and stir.
Sift the flour with the baking powder, salt, and soda. Stir this into the other mixture, string until smooth. Add the nuts if desired and stir again.
Pour the batter into a greased 9 by 5 by 3 inch loaf pan. Bake in a 350 degree oven for 60 to 70 minutes or until the loaf tests done. Remove from the oven and allow to cool. Use 2 spatulas to remove the loaf from the loaf pan, and let it finish cooling on a wire rack.

when i went, lots of places ate paella style food as a traditional meal, rice, with seafood.
also, a traditional snack is fried bananas. they are quite nice, as long as you dont overdo it as they go too hard. they dont need to be eaten hot.

It has recipes from about seven different Caribbean countries. The key to making good Carribbean foods is the pepper, they like there food very spicy.
Something that almost everybody eats in the Bahamas is beef or chicken patties. They are listed in the Jamican section. They are good, and quite easy to make.
The Caribbean seem to be very good at desserts.
Macaroons seems popular,and guava duff is a specialty.
Stewed meats, conch chowder, fritters are very popular.as is a traditional macaroni pie, and peas and rice. Fried plantains are are staple also it appears.
Drinks.... Fresh coconut water is the best so far.
I dont have recipes, but I am learning how to cook the Caribbean way and that site has helped alot.
I think you would be best off to pick a country in the Caribbean and then go from there.
Good luck and have fun.. there really is alot of yummy flavorful foods available to chose from. Don't be afraid to try a bit of pepper, but you may find that some are to hot for a pallette that is not used to pepper. wash and de-seed them if you use them at all. The peppers really go give the foods its wonderful flavor though.
You should definitely try my recipe for Mediterranean Lemon Chicken. It's juicy and delicious!
Mediterannean Lemon Chicken
1 lemon
2 teaspoons dried oregano
3 cloves garlic, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
6 chicken legs, skinned
Preheat oven to 425 degrees F
Grate the peel from 1/2 the lemon, squeeze out the juice (about 1/4 cup) and add to peel with the oregano, garlic, oil, salt and pepper. Stir until mixed.
Coat chicken pieces with the lemon mixture and arrange, bone side up, in the baking dish. Cover dish and bake for 20 minutes. Turn and baste chicken.
Reduce heat to 400 degrees F and bake uncovered, basting every 10 minutes, for about 30 more minutes. Serve chicken with pan juices.
Great Mixed Drink over ice:
3 oz fresh coconut milk
1 oz Malibu Coconut Rum
6 oz Orange Juice
a splash of lime juice
curried goat , but if english people are eating it , its called mutton ,get your goat season the night before with 2 large onions 2 tps salt, loads of black pepper ,2 tps of papirika, 2tps of all purpose seasoning, 2 tbs of curry powder,in a large pan heat oil on a medium heat add goat and brown, then cover with boilin water then simmer for 4 hours ,tasteing after 2 then add wht you think is missing i.e more salt,black pepper curry powder its cooked when the meat is soft and falls of the bone
corned beef n rice
fry onions in a little oil then add 2 chopped tomatoes and some black pepper, fry on a medium heat for 5 mins then add a tin of corned beef cut iinto 8 peices fry for 5 mins then add a tea cup of water then simmer for 10 mins serve with rice
drink 1 can of guinness and add 2 tbs of condensted milk add some nut meg chill and serve. another drink is irish moss can get from most asian shops
chicken season the night before with black pepper salt all purpose season, curry powder small amount of tumrik some onions and some tyhme next day fry on low heat till cooked
of you could season chicken with ready made jerk season and fry or put in oven
