Ultimate Favourite Bbq Chicken Pizza
cooked boneless skinless chicken breasts, diced (leftover chicken is perfect!)
1 cup of your favourite barbecue sauce (I like Sweet Baby Ray's or Bobbie Q sauce Bobbie-Q Sauce (Barbecue Sauce))
1 (19 ounce) can pineapple tidbits, drained well.
20 fresh mushrooms, sliced (more if you desire)
1 small onion, sliced thin
3 cups pizza sauce, your favourite
2 prepared pizza crust (store bought or homemade, I use Pizza Dough)
2 cups grated mozzarella cheese
2 cups grated cheddar cheese


1. Pre bake pizza crusts for approximately 5 minutes.
2. Use 1 1/2 cups of sauce to cover each pizza.
3. Pour BBQ sauce over diced chicken and toss to mix well.
4. Top pizza crusts with BBQ chicken, onions, mushrooms, and pineapple.
5. Sprinkle 1 cup of each kind of cheese on each pizza, (use more if you like.).
6. Bake at 350 degrees for 10 minutes or until crusts begin to brown.
7. Broil for 2 minutes or until cheese bubbles.
8. Serve with extra BBQ sauce to dip your crusts into-Yum!

i'd make cut it up and make bbq chicken nachos or quesadillas with bbq chicken and cheese.

here's a recipe though, for bbq chicken calzones that looks rather interesting (and since you already have cooked chicken, you wouldn't have to worry about that part):

INGREDIENTS
4 slices bacon
1/2 small onion, chopped
3 cups shredded, cooked chicken breast meat
2/3 cup barbeque sauce
1 (10 ounce) can refrigerated pizza crust dough
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh cilantro

DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).
Fry bacon in a large skillet over medium-high heat until crisp. Remove from the pan to drain on paper towels; crumble. Add the onion and shredded chicken to the hot bacon grease in the pan. Fry over medium heat until onion is tender. Stir in 1/3 cup of barbeque sauce, and remove from the heat. Mix in the cooked bacon.
Roll the pizza crust dough out onto a greased cookie sheet. Press out to an even thickness, and then cut in half. Divide the chicken mixture between the two pieces of dough, spreading on only half of each piece to within 1/2 inch of the edge. Drizzle the remaining sauce over the filling. Sprinkle the cheese and cilantro over the top. Fold the uncovered portion of dough over the filling, and press the edges together with a fork to seal.
Bake for 25 minutes in the preheated oven, or until browned to your liking. Cool for a few minutes, then cut each calzone in half. Each serving is half of a calzone. These can be served with additional barbeque sauce if you like.

Make a BBQ chicken Caesar salad. Make a bbq chicken wrap. Make chicken salad.

Take it off the bones, chop it up and make salads out of it. If it has BBQ sauce on it, chop it up and add it to pasta. Add it to macaroni and cheese, dice or shred it and make barbecued chicken sandwiches on sesame topped toasted with swiss cheese.

CHICKEN AND BEAN SALAD

2 cups cooked chicken, shredded
1 can cannellini beans
1/4 cup green onions, sliced
1/3 cup miracle whip salad dressing
1 tablespoon soy sauce
1 teaspoon freshly grated ginger
2 teaspoons rice vinegar
1/4 teaspoon dijon mustard
2 garlic cloves, minced
1/2 red onion, sliced thinly
1/8 teaspoon cayenne pepper (pinch)
lettuce leaves

Combine chicken, beans, onions, in a salad bowl.
In a small bowl or blender, combine ginger, soy sauce, vinegar, mustard, garlic, and mayonnaise; blend.

Toss with chicken mixture and serve over lettuce leaves.

Make a BBQ chicken pizza. Get a couple of premade crusts, make some from a mix, or do it from scratch. Use BBQ sauce instead of pizza sauce. Spread the cheese on. Use a little bit of green pepper and pineapple if you want. Bake according to the directions on the crust mix. Usually around 475 degrees and about 10 minutes.....but watch it! You don't want to burn this delicious creation.

I like Alpha-Omega Omlettes, they are chicken omlettes, bbq chicken would be a nice taste.

you can make barbeque chicken sandwiches
or a barbeque chicken salad.

For something simple, make up a box (or two) of Mac-and-Cheese according to the instructions. Cut up your chicken and add it, sauce and all, right after you've mixed in the sauce ingredients. It sounds weird, but is absolutely yummy.

I've also been known to add a can of chili to the mac-cheese when I didn't have BBQ chicken available. That's good, too.

Chicken Salad

1 stalk of celery chopped
2 scallion chopped
1 dill pickle chopped
1 cup mayonnaise
1 tablespoon mustard
Pinch of salt and pepper

Combine with chicken and serve on sliced whole wheat bread.
