Kandhani Naan

Ingredients:
2/3 cup milk (or water)
2 cups all-purpose flour
2 teaspoons onion seeds
1 teaspoon yeast (dry)
1 teaspoon sugar
1 teaspoon salt
4 tablespoons clarified butter
2 tablespoons yogurt

Steps:
1. Whisk warm milk/water with the yeast and sugar until the yeast is dissolved.

2. Cover and let stand in a warm place for 10 minutes.

3. Sift flour and salt three times into a large bowl add the yeast mixture, half of the ghee and the yogurt.

4. Mix into a soft dough then knead on a floured surface for about 5 minutes or until dough is smooth and elastic.

5. Place the dough in a large greased bowl, cover and let stand in a warm place for 1 1/2 hours or until the dough is
doubled in size.

6. Punch down dough then knead for 5 minutes.

7. Divide dough into 6 pieces.

8. Roll each piece out into 8 inch round naans.

9. Cover an oven tray with foil and grease the foil.

10. Brush the naan with a little of the remaining ghee and sprinkle with some of the kalonji.

11. Cook naan one at a time under a very hot grill for about 2 minutes on each side or until puffed and just browned.

1 (.25 ounce) package active dry yeast
1 cup warm water
1/4 cup white sugar
3 tablespoons milk
1 egg, beaten
2 teaspoons salt
4 1/2 cups bread flour
2 teaspoons minced garlic (optional)
1/4 cup butter, melted
DIRECTIONS
In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.
Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.
During the second rising, preheat grill to high heat.
At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.
