A HEALTHY SNACK

1 c. chunky peanut butter
2/3 c. honey
1/2 c. powdered milk
16 graham crackers, crushed fine or 1 1/4 cups crumbs

Combine peanut butter, honey, and dry milk, stir until blended well. Add cracker crumbs, stir well. Grease hands, roll mixture into ping-pong size balls or smaller if desired. Then roll in either shredded coconut or wheat germ. Best if kept refrigerated.

FRUIT MUFFINS (HEALTHY SNACK)

1 egg
1/2 c. vegetable oil
3/4 c. milk
2 c. wheat flour
1/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1 c. chopped fruit (peaches, apples, prunes)
1/2 c. brown sugar (optional)

Heat oven to 400 degrees. Use muffin cups or grease bottoms of muffin pans. Beat egg. Stir in oil, milk and fruit. Stir in remaining ingredients all at once, just until moistened. Batter will be lumpy. Fill muffin cups 3/4 full. Bake until golden brown, about 20 minutes.

HEALTHY POPCORN SNACKS

4 gal. popped popcorn
4 gal. size ice cream buckets
3/4 c. melted butter
1 tsp. cinnamon & 4 tsp. sugar
1/4 c. Parmesan cheese
Dry taco or chili seasoning mix

To each of 3 gallons of popped popcorn stir in 1/4 cup of melted butter and mix in the following: unbuttered Bucket #2 - add cinnamon/sugar Bucket #3 - add 1/4 c. Parmesan cheese Bucket #4 - add dry taco or chili seasoning mix
Store for economical variety snacks.

2 waffles
an apple
a little honey.

toast waffles. cut apple into thin slices. put apples in between two waffles and drizzle on honey. enjoy!!!!

I love just a big bowl of steamed edamame! (soybeans in their shells - you just suck em out and eat em!)
I also do steamed artichokes with lemon, yogurt, nuts, cheese and triscuits, roasted red peppers and garlic on thin slices of french bread, stuff like that! I am not much of a junk food eater!

Chewy Granola Bars

INGREDIENTS
* 4 1/2 cups rolled oats
* 1 cup all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon vanilla extract
* 2/3 cup butter, softened
* 1/2 cup honey
* 1/3 cup packed brown sugar
* 2 cups miniature semisweet chocolate chips

DIRECTIONS
1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
2. In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
3. Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.
