MUSHROOM A LA GRECQUE

Ingredients
290ml/? pint water
2 tbsp olive oil
1 tbsp white wine vinegar
zest of 1 lemon, lime and orange
pinch of salt
140g/5oz mushrooms


Method
1. Preheat a medium saucepan.
2. Bring the water, olive oil, vinegar and zest to the boil in the medium saucepan. Season.
3. Add the mushrooms and simmer for 5 minutes.
4. Remove the mushrooms from the stock with a slotted spoon. Place in a serving dish.
5. Reduce the stock by boiling rapidly.
6. Pour the stock over the mushrooms and serve.

The recipes recommended on web sites are mostly American rubbish - you would never use any form of wild mushroom because they don`t have the texture of button mushrooms - the secret of a la Grecque is the fact that the veg (mushrooms, cauli, celery, fennel etc )need to marinate in the cooking liquor!!
Take 2 shallots finely chopped
125mls dry white wine
6 whole peppercorns
1 bay leaf
10 whole coriander seeds
A little olive oil & water
A squeeze of lemon juice
A little salt
A few parsley stalks (remove these before serving)
500g button mushrooms wiped & cut into 1/4`s or 1/2`s depending on size

Simmer all the ingredients except the mushrooms for five mins to infuse the flavours, add the mushrooms & simmer for a further five mins - remove from the heat - allow to cool then chill in the fridge before use
