Does anyone have a recipe for sour cream gravy?

I remember eating a rice and chicken dinner, and it had sour cream gravy on it. Do you know how to make it??


Answers:
It's basically milk gravy with sour cream instead of just milk.

Make a roux. In this case, you're cooking chicken, so remove most of the drippings from the bottom of the skillet (but leave the bits), add a couple of tablespoons of flour to it, and stir the stuff constantly under fairly low heat until the flour cooks and thickens.

Add sour cream to loosen up the roux. Continue stirring constantly. At the last minute, you can add milk to make the gravy suitable runny. Season the gravy with salt and pepper.

This is hardly the only way to make gravy. Many people make gravies with starch instead of flour, especially poultry gravies, or they use other thickeners, such as arrowroot. With any of these other gravies, you simply add replace some or all of the liquid with sour cream.

Another interesting gravy can be made by adding vegetable flakes to any gravy recipe. They need to be in long enough to hydrate, especially the carrot. I made some gravy like this for my wife, and she forgot what she was mad at me about! That's about as high a recommendation a recipe can get....

SOUR CREAM GRAVY

2 c. sour cream
1 1/2 c. finely sliced onions
2 tbsp. butter

Bring sour cream and finely sliced onions to a slow boil, stirring constantly. Simmer until onions are tender, 7 to 8 minutes. Add butter and salt to taste. If gravy seems too thick, add milk to thin to desired consistency.
