how do i know if the pork is cooked throughly if i don't have a meat thermometer? i'm boiling it for a mexican style soup but i don't know if it's done yet (they're pork neckbones)

I will boil the pork bones on low heat for about one and a half hours to create a tasty stock. By then, the pork bones are definitely cooked and meat should almost be falling off the bone. Then proceed with the other ingredients.
just taste it if it does not taste right then it is not cooked right
Well, if it's not pink, and it's kind of falling off the bones, it's very thoroughly done.
First, you should never continue to boil meat. Neckbones usually take two hours in a 350 oven. Pork is safe to eat at 150-155 degrees. So it gets done faster than chicken (165 deg). But even though they're safe to eat, neckbones won't be tender like a pork chop would be at the same temp.
Actually pork is supposed to have a pinkish color after cooking.
Neckbones, ( which I love with lima beans) should only boil for about 45 min. to an hour.
If it's not pink inside it is overcooked.
Any good cook or chef knows that.
