Question:

What is the best way to cook a 20 oz t bone steak medium?

Answers:
Fire up the grill and sear it on both sides for about 6 minutes a side. Be sure coals are hot hot.
Season with lots of black pepper and garlic salt.

On the grill overtop some hot charcoal...

It all depends upon the grade of meat, the thickness of the steak, and which cut it is. But this website may give you some guidelines if you know how thick it is:

What I was told and get good feedback from is:
Get the grill or heavy cast iron pan hot (quite hot) put the meat on until the juices come through the top evenly then flip it over until the juices come through again and it is done. It might pay to make a cut and see if it is not too pink for you, before you serve it.

Too much flipping is bad. I assume you are talking beef, Bison apparently should be cooked slower I am told.

You may want to marinate it first (lots of recipies out there for marinade) or add some BBQ sauce after you flip it on the grill, but that is personal preference.

I like to cook ours on the grill. I place the steak on a very hot grill and let it sear on each side for 4-5 minutes. Don't move around once you begin the searing process (helps keep the juices in). Once seared on both sides cook to your desired choice. Another tip that I have learned is to marinate the steak( I use Kraft balsamic vinaigrette salad dressing) and let it become room temperature before place on the grill.
