CHICKEN SATAY
2 1/2 lb. boneless chicken breasts
Marinade:
6 cloves garlic, chopped
4 tsp. coriander
4 tsp. light brown sugar
1 tbsp. black pepper
2 tsp. salt
1/2 c. shoyu
4 tsp. ginger, chopped
2 tbsp. lime juice
6 tbsp. oil
1/4 c. fresh coriander, chopped (for garnish)
Mix marinade ingredients. Cut chicken into 1 1/2-2 inch cubes. Add to mixture and marinate at least two hours.
Chicken Satay:
Thread chicken pieces onto one end of satay sticks. Broil or much better, barbecue, baste with marinade. Serve with peanut sauce for dipping.
Peanut Sauce:
1 c. chunky peanut butter
1-2 tsp. hot chili sauce
2 cloves garlic, crushed
3 tbsp. honey
1 tsp. cayenne pepper
1/4 c. lime juice
1/4 c. shoyu
1/2 c. peanut oil
Mix ingredients together. Should have a sweet/hot peanut flavor. Taste and adjust ingredients accordingly.

use a marinade of an indonesian soy sause, called ketcap, mix it with garlic, tablespoon of sugar and a couple of squeezes of lemon juice. Add chilli powder for a spicy effect if you want to. Cut the chicken breat in cubes, marinade for a few hours. Meanwhile soak the bamboo sticks in water to prevent them from burning on a barbecue. Put the cubes on the sticks. Grill them. Serve with a peanut sauce (hot peanutbutter with a little ketcap and chilly powder, diluted with water). You can also add some french bread with that.

2 Tablespoons Crunchy peanut butter

1/2 Cup Freshly squeezed lime juice

To make the marinade, combine the first 7 ingredients in a shallow dish. Thread the chicken strips onto bamboo skewers in a serpentine fashion. Place the skewers into the soy sauce mixture and let marinate in the refrigerator at least 2 hours, although overnight is preferable.
Make the peanut sauce by combining the next 7 ingredients (peanut butter through garlic) in a saucepan. Season to taste with cayenne pepper. Cook over moderate heat, stirring constantly, until the sauce is as thick as heavy cream (about 15 minutes). Transfer to a food processor or blender and pur?e briefly. Add chicken broth and cream and blend until smooth. This mixture can be made several hours ahead and stored in the refrigerator. Bring to room temperature before serving.
Prepare moderate-hot charcoal coals or preheat a broiler.

Chicken Satay Recipe
1 teaspoon ground coriander
1 teaspoon soft brown sugar (muscovado)
1/2 teaspoon ground cumin
1/2 teaspoon turmeric

2 tablespoons dark soy sauce
2 tablespoons vegetable oil
5 chicken breasts
12 wooden skewers
3 teaspoons peanut butter
milk
chili powder
Dice the chicken into cubes. Mix all the main ingredients with the chicken and place in the refrigerator for three hours or preferably all night. Thread the chicken onto the wooden skewers and place under the grill (broiler) for around 15 minutes, turning them and basting them with the leftover marinade.
For the sauce, gently heat the peanut butter in the microwave so that it is soft. Gradually add the milk and chili powder. The final consistency should be firm and not runny.
Serve the satay sticks on a bed of rice garnished with fresh coriander and chopped lemons. Allow guests to serve themselves the satay sauce.
