Use new potato's instead of old ones in the store. New potato's are only available mid to late summer directly from the ground. FF must be cooked twice to get them right. Oil 350 to 375 degrees and use a fryer with a temperature setting or a pan with a thermometer you can test the oil with. Cook for 5 minutes, drain and cool completely. Then back into 350 to 375 degree oil till golden brown. McDonald's does the first cooking, then flash freezes and second cooking is done from frozen to golden brown in the restaurant fryer.
soak them in water and salt for a few hours and then make sure the oil is extremely hot when you put the fries in and salt the fries right after you take them out of the frier...im just saying what i like.

Soak the raw potatoes in sugared water for a couple hours, then drain them & pat dry before frying.

OVEN BAKED FRENCH FRIES
5 pared lg. white potatoes
5 tbsp. melted butter
1 3/4 tsp. salt
Cut each potato into 8 or 10 lengthwise strips, 1/2 inch wide and 3/8 inch thick. Arrange in baking pan so they don't overlap. Pour melted butter over them; sprinkle with salt and bake in hot oven of 450 degrees for 30 minutes or until tender, turning them over occasionally. Serves 4.

Not only will your french fries look better , but since they are all the same size they will all be done at the same time

peel your potatoes and stick them in micro for 1 minute and make sure your oil is very hot over 375 and put in fries and they will come out crispy and tender inside. They come out very golden brown and delicious. It's easy and fast.

1. Preheat oven to 200 degrees.
2. In a large dutch oven heat oil to 320 degrees.
3. peel potatoes and, EVENLY cut fries into 1/4" x 1/4" strips of equal length.
4. Place in a large bowl of cold water as you're slicing.
5. Drain potatoes thoroughly, removing any excess water.
6. When oil reaches 320 degrees, submerge the potatoes in the oil.
7. Working in small batches, fry for 2 to 3 minutes until they are pale and floppy.
8. Remove from oil, drain, and cool to room temperature.
9. Increase the temperature of the oil to 375 degrees.
10. Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes.
11. Remove and drain on roasting rack.
12. Season with kosher salt.
13. Once again this is done is small batches and will need to be kept warm in the oven until all potatoes are fried.
Cheesy Steak Fries
Ingredients
32 oz. pkg. frozen steak fries
1 - 2 tsp. Seasoned Salt
1 - 2 Tbsp. Bacon Bacon?
8 oz. shredded cheddar cheese
Directions
Spread fries on baking sheet; sprinkle with Seasoned Salt. Bake as directed on package. Remove from oven; sprinkle with remaining ingredients. Bake an additional 3-5 minutes or until cheese melts. Makes 6-8 servings.
