* 8 Eggs
* 2 tbsp Olive oil

* Leave the tortilla to relax for a few minutes, cut into wedges and serve with a green salad.

Tip:

* For a more spicey option, add 1/2 tsp hot Paprika powder.
Ps: u can use cheddar or any other cheese instead of feta.

I'm not a granny, but if you buy a small boneless ham you can slice it put it in a baking pan and drizzle a glaze over the top, mix some maple syrup with some mustard powder. Bake until the syrup is bubbly. Make an impossible broccoli and cheese pie or two, just place cut up steamed broccoli in a pie plate, top with shredded cheese, combine 2 cups milk, 1/2 cup bisquick and 3 eggs and pour over the top and bake for 20-25 minutes. It's like quiche but much easier and bakes it's own crust. A fruit salad would be a great accompaniment, especially in the warmer months. Any kind of muffin or sweet roll. Coffee, tea and fruit juices.

Stuffed french toast:

One loaf French bread; 4 eggs, beaten; cooked & crumbled bacon, cooked & drained bulk sausage, shredded cheddar cheese.

Cut the bread in 3" slices, then cut a "pocket" 3/4 of the way through the slice. Fill with your choice of meat & cheeses above, then carefully dip both sides in beaten egg. Fry in a hot greased skillet on both sides until golden and cheese is melted.

This is always a big hit at our family get togethers!

I usually have a big bowl of mixed fruit too--watermelon chunks, red & green grapes, fresh pineapple pieces & strawberries.
Provide bagels and cream cheese or/and butter for lighter appetites, and plenty of juice coffee, milk, and dry cereal.

I always make muffins for brunch...I have two really easy and delicious recipes...one sweet and the other savory.

(The sweet one)
INGREDIENTS
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup vegetable oil
1 cup blueberries (or 1 cup of whatever fruit you want..raisins,strawberries, cranberries, etc.)

DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C).
Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. Add 1 cup fresh blueberries. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
Bake for 25 minutes, or until golden. (Serve with butter or jam for extra goodness!)
