Pesto, or any good recipe for lots of Basil?
I have grown a lot of Basil. Now I need to do something with it. I only have a blender, no food processor. Can anyone give me a good recipe?

definitely pesto...fresh basil, pine nuts (i toast them first), parmesan cheese, garlic, olive oil, salt and pepper.....i also toss in a couple of ice cubes....they seem to help the pesto stay that beautiful green color and not turn olive green or brownish green
Blend them with olive oil, vinegar and walnuts for pesto.
Pesto is traditionally made with basil, olive oil, pine nuts, garlic and Parmesan cheese. A blender is a fine substitute for a food processor.
Pesto Recipe
* 2 cups fresh basil leaves, packed
* 1/4 cup grated Parmesan cheese
* 1/2 cup Olive oil
* 3 tablespoons pine nuts or walnuts
* 3 garlic cloves, finely minced
Place basil leaves in small batches in food processor and whip until well chopped (do about 3/4 cup at a time). Add about 1/3 the nuts and garlic, blend again.
Add about 1/3 of the Parmesan cheese; blend while slowly adding about 1/3 of the olive oil, stopping to scrape down sides of container.
Process basil pesto it forms a thick smooth paste. Repeat until all ingredients are used, mix all batches together well. Serve over pasta. Basil pesto keeps in refrigerator one week, or freeze for a few months.
i grew so much basil last year too, ive made pesto and then i froze the rest...

Wrap basil and a piece of proscuitto around a jumbo shrimp...marinate w/ balsamic and olive oil...grill.
Appetizer...basil, proscuitto, fresh mozarella
Dry it for use later.
