I'd use powdered arrowroot instead of flour if you don't have corn starch. Tip: Keep a box of corn starch in your pantry, you will become the God/Goddess of Gravy! You can also use it for stir frying, sauces, put on rashes, and my kids favorite, mix with water and add a few drops of food coloring and you have "slime". Kind of like play dough, kind of like goo, fun to play with.

What kind of muffins are you making? None of my muffin recipes call for cornstarch. Cornstarch and flour can both be used for thickening sauces and gravies.

I've never heard of corn starch in muffins, usually flour is the main base of the batter. For thickening sauces or gravy, yes you can use flour, but it may be difficult to remove the resultant lumps.

you can use flour but make sure that if it is used in a liquid for thickening, that you bring it to a boil for the flour to work correctly. if the item you are cooking has a delicate flavor, you may be able to taste the raw flour in it but in muffin, I doubt it would mke a difference.

instead of eggs, use vegetable oil. about 2 Tablespoons of oil per egg...yes you can use flour instead of cornstarch
