What's an impressive dish to make for a health conscience person?
Okay so I made dinner for this guy I'm dating, I didn't ask him what he wanted- I was kind of going for the surprise routine.. Anyway, he was really impressed w/the cornish hens, yellow ricce, asparagus and salad. I made other stuff too, but because this meal was so elaborate (for me and him anyway) I'm trying to think of something that will be really nice for next time. I was thinking of Fish.. But I don't know what goes with it. I know he loves vegtables.. Please help!!

Remove head and tail and make two or three slices to the bone in each side.
Sprinkle with salt and some lemon juice. Place on, a bed of lemon slices, (from the lemons you have squeezed for the juice) on a piece of tinfoil.
Fold into a parcel and bake at 170C for about 15 minutes
Serve with steamed leeks, mashed potato, and sweetcorn.
Have you ever considered fried catfish? That is a little greasy yes but if you make everything else vegetables and homestyle biscuits, he should be thankful and ready to chow down

Ok what you need is:
-Cauliflower
-Butter (lowfat would be better since he's a health nut :p)
&
-Philidelphia cheese
1) First, prepare a pot of boiling water and place the cauliflower inside the pot; let it simmer for a few minutes.
2) Smash the cauliflower when it's done, then mix it together with the butter and phili cheese in a different bowl.
When you're done, it should look like mashed potatoes, but of course has cauliflower.
......but er, make it for yourself first and taste it when it's done.
If you don't like it, then uh, I should call my mom over there :)

Salmon baked in parchment paper. Parchment paper is available in specialty cook shops or on the Internet. Each person's salmon filet is baked in its own parchment paper pouch. It's very simple. Just cut a piece of parchment paper for each person, place the salmon filet in the center of the paper. Cut very thin slices of leeks (onions or scallions are also OK if you can't find leeks). Top each salmon filet with the leeks. Drizzle some melted butter or olive oil over each filet. You can also add some fresh or dried dill (dill weed, which is the leaves... not dill seed). Dill goes great with salmon. Fold up the parchment paper to form a little pouch, and staple closed. Bake these pouches on a cookie sheet in a 350F pre-heated oven for about 10 to 15 minutes. You can open one up and test for doneness after 10 minutes. If not done, then re-staple and put back in the oven. The cooking time all depends upon the thickness of the fish. You can also cut thin matchstick shaped carot slices and add these to the parchment pouches along with the leeks. I also like to add salt before cooking, but for the health-conscious it's probably best to leave that out and let them add their own salt if they wish. This recipe may sound complicated, but it's actually a very quick and easy meal to prepare, tastes great, and seems special.

Hawaiian Fish with Pineapple
INGREDIENTS
2 (4 ounce) mahi mahi fillets
2 cups lemon juice
dried thyme to taste
dried basil to taste
1 (8 ounce) can pineapple chunks, drained
1/2 cup milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line a baking pan with aluminum foil.
Arrange the mahi mahi fillets in the prepared baking pan. Pour lemon juice over the fillets, and sprinkle with thyme and basil. Top each fillet with pineapple. Pour milk into the pan, not directly on the fish.
Bake 25 minutes in the preheated oven, or until fish flakes easily with a fork.

Roasted Vegetables
INGREDIENTS
1 small butternut squash, cubed
2 red bell peppers, seeded and diced
1 sweet potato, peeled and cubed
3 Yukon Gold potatoes, cubed
1 red onion, quartered
1 tablespoon chopped fresh thyme
2 tablespoons chopped fresh rosemary
1/4 cup olive oil
2 tablespoons balsamic vinegar
salt and freshly ground black pepper
DIRECTIONS
Preheat oven to 475 degrees F (245 degrees C).
In a large bowl, combine the squash, red bell peppers, sweet potato, and Yukon Gold potatoes. Separate the red onion quarters into pieces, and add them to the mixture.
In a small bowl, stir together thyme, rosemary, olive oil, vinegar, salt, and pepper. Toss with vegetables until they are coated.
Spread evenly on a large roasting pan.
Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.
Mushrooms a la Gill
INGREDIENTS
2 cups uncooked macaroni pasta
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 (10.75 ounce) can milk
1/2 (10.75 ounce) can water
1/4 cup sliced fresh mushrooms
salt and pepper to taste
DIRECTIONS
Bring a saucepan of lightly salted water to a boil. Add pasta, and cook until al dente, about 8 minutes. Drain.
In a separate saucepan, stir together the cream of mushroom soup, milk, water and mushrooms. Bring to a simmer, and cook until mushrooms are tender. Mix with cooked macaroni, and serve.

INGREDIENTS
5 egg yolks
1/2 (14 ounce) can sweetened condensed milk
1/2 (12 ounce) can evaporated milk
1 tablespoon and 1-1/2 teaspoons margarine
1 tablespoon and 1-1/2 teaspoons brown sugar
DIRECTIONS
Whisk together the yolks, condensed milk, and evaporated milk; set aside. Melt margarine in a small saucepan over medium heat. Stir in the brown sugar; keep stirring until the brown sugar has dissolved, and is smooth. Evenly spread the sugar over the bottom of a pie plate, then pour in the custard. Cover with foil. (See note at bottom.)
Fill a large pot approximately 3/4 full with water and bring to a simmer on the stove. Place the pie plate over the simmering water and cook for 65 to 70 minutes, until flan has set. Remove flan from the boiling water and allow to cool for at least 30 minutes.
To serve, loosen the flan from the pie plate by running a knife around the edges; invert onto a serving plate. Serve at room temperature or cold.
Note
Since this flan is cooked on the stove and not in the oven, it's important to have a pie plate with handles and an appropriately sized, large pan. The two must fit together well, securely holding the pie plate over the simmering water while the flan cooks.
yes fish is a good choice, i made Grilled Tilapia fillets with a pineapple "salsa"
first i grilled the tilapia
for the salsa
2 Cups crushed pinneapple, try to strain most of the juice
1/2 cup red pepper chopped
1/2 cup red onion chopped
1Table spoon fresh cilantro
let sit in frige overnight if you can
put the fish in a cassarole dish and pour this salsa on top
bake in the oven for 10 minutes on 325F for about 15 minutes, its really yum
You can make simple white rice with this :)
Make some steammed veggies too, carrots, asparugus, broccoli.
Serve a creamy white soup before the main meal, broccoli soup is good!
For dessert you could buy strawberry sherbet , scoop with ice cream scooper into a small dish, chop some strawberries and set them in the bowl, garnish with a mint leaf if desired
*hint: dishes with lots of color always impress, if it looks good to the eye, it will seem to taste better
